Happy Wednesday guys! Recipe of the day is Zucchini Oat Fritters – golden crispy on the outside, with lots of dill and garlic, and delicious served with garlic mayo dip.
I make Zucchini Fritters quite often but I’ve never used oats before.
I loved how they turned – really crunchy on the outside with a hint of nuttiness from the oats, I guess. 🙂
These Fritters love dill and garlic so make sure to use lots. I serve them with garlic mayo or Sriracha mayo but it’s completely up to you.
What you need:
- zucchini
- oats
- an egg
- feta cheese
- dill
- garlic
- flour
- salt and pepper
Here’s how to make these delicious Zucchini Oat Fritters
Ingredients:
- 3 courgettes, grated
- 100g oats
- 100g feta cheese, crumbled
- 3 garlic cloves, crushed
- 80g dill, finely chopped
- 1 egg
- salt and pepper to taste
- flour for coating
- sunflower oil for frying
Preparation:
- Use a cloth or a sieve to gently drain the zucchini.
- Once drained, combine them with the rest of the ingredients in a bowl and place in the fridge for 30 minutes.
- Heat a pan with sunflower oil (about 2/3 of the pan) and shape small balls, as big as meatballs. Gently press them between your palms, coat them in flour and fry in the pan for 4-5 minutes on each side.
- Place the cooke fritters on a plate, lined with kitchen roll to absorb the excess oil.
- Serve them warm with garlic mayo dip or any dip by your choice.
