Zucchini Oat Fritters

Happy Wednesday guys! Recipe of the day is Zucchini Oat Fritters – golden crispy on the outside, with lots of dill and garlic, and delicious served with garlic mayo dip.

Zucchini Oat Fritters

I make Zucchini Fritters quite often but I’ve never used oats before.

I loved how they turned – really crunchy on the outside with a hint of nuttiness from the oats, I guess. 🙂

These Fritters love dill and garlic so make sure to use lots. I serve them with garlic mayo or Sriracha mayo but it’s completely up to you.

  • Heat a pan with sunflower oil (about 2/3 of the pan) and shape small balls, as big as meatballs. Gently press them between your palms, coat them in flour and fry in the pan for 4-5 minutes on each side.
  • Place the cooke fritters on a plate, lined with kitchen roll to absorb the excess oil.
  • Serve them warm with garlic mayo dip or any dip by your choice.

Enjoy!
