Have you guys tried oat bran cake?
I can assure you, it tastes as good(even better) as normal cake but it’s also good for you.
I made Mixed berries & Quince Oat bran Bundt Cake the other day for the first time and I absolutely loved it.
I quite like oat bran ( I have made Oat Bran Muffins before and they are amazing) so I decided I might make and oat bran cake as well.
And the quince – what can I say, I feel it’s very underestimated, but it shouldn’t be. It tastes divine and it is so aromatic.

Bottom line, this is delicious and healthy cake with lots of lovely berries and quince which I think works for every diet!

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 300g/10oz oat bran
  • 1/2 cup sunflower oil
  • 1/2 cup honey
  • 150g/5oz mixed berries
  • 1 quince, cut into small pieces
  • 3 eggs
  • 1tsp vanilla paste
  • 1tsp baking powder
  • powder sugar for dusting, if wished

Preparation:
  1. Preheat the oven to 190°C/392°F.
  2. To poach the quince – cover with water and add 1tbsp cinnamon and 5tbsp sugar. Simmer for about 20 minutes or until soft.
  3. In a bowl mix all the cake ingredients apart from the fruit.
  4. Grease a bundt cake tin and arrange the berries thoroughly.
  5. Pour over the cake mixture and arrange the quince on top.
  6. Bake in the oven for about 30 minutes or until ready.
  7. Leave it to cool down, turn upside – down and dust with powder sugar, if wished.

Tip: Why not serve with some extra honey on top!
