Happy Tuesday guys! Recipe of the day is Ham & Cheese Zucchini Roulade – light and creamy, with fresh dill and garlic, perfect for a light lunch or appetizer.
The combination of zucchini, cream cheese filling and ham is so tasty. I served it as an appetizer but it is also quite filling so it’s perfect for a delicious lunch.
What you need:
- zucchini/courgette
- cream cheese
- garlic
- dill
- double cream
- ham
- eggs
- salt and pepper
Here’s how to make the Ham & Cheese Zucchini Roulade
Ingredients:
- 2 zucchini/courgettes, grated
- 3 eggs
- 3 heaped tbsp flour
- 400g cream cheese
- 120ml double cream
- 200g ham slices
- 2 garlic cloves, crushed
- 30g fresh dill, chopped
- salt and pepper
Preparation:
- To start with, drain the grated zucchini from any excess water. Use a sift and squeeze them in between your palms.
- Next, combine the zucchini, eggs, flour, season with salt and pepper and pour the mixture into a greased baking tray.
- Bake in the oven at 200° for about 20 minutes and leave to cool.
- Meanwhile, in a bowl, whisk the cream cheese and double cream. Season with salt and pepper, add the garlic and dill and mix well.
- Spread the cream cheese on the zucchini roulade evenly and arrange the ham slices. Use foil to roll it into a roulade, squeezing gently. Wrap it up in foil and refrigerate for a couple of hours before serving.
