Cold zucchini & Avocado Soup

As my life has become a tiny bit busier recently (baby number three is finally here) all I’m looking for when cooking is timing (and flavour of course :-)), especially during the week. And the fact that the weather is finally hot and sunny all I can think is fresh salads, soups and everything with seasonal fruit and veg, like this particular soup. All you need is zucchini, avocado and some creamy Greek yogurt. The rest is seasoning and love. 🙂

Cold Zucchini & Avocado Soup

This beautiful Zucchini & Avocado Soup is just one of those meals that simply scream Summer. All it takes is just a couple of minutes with the hand blender and you’ve got yourself a tasty and refreshing soup, which I love having for lunch. I usually add some seeds, extra olive oil and some crumbled feta cheese. For extra crunch and to make it more filling I add some oat biscuits.

Apart from having it as a soup, this meal works just perfect as a dip too, just make sure to make it a bit thicker. Slice some peppers, carrot stick and celery and enjoy a healthy and delicious snack! 🙂

I’d like to keep it in the fridge for a couple of hours, it does get even tastier. Also, this soup doesn’t last long and it’s at its best when fresh. So make sure to have it fresh from the fridge and don’t leave any leftovers. 🙂
