Happy Monday guys! Today’s recipe is Stuffed Eggplants with Turmeric Rice – a healthy and delicious dish, quick and easy to make.
I know a lot of people simply dislike eggplants/aubergines but i think they’re just delicious. They are so versatile and there are so many different ways to prepare and enjoy them. As for the turmeric, it seems that everything looks prettier with it. I love the colour it gives to the food and my kids don’t really mind it which is great. I don’t think it adds a lot of flavour though, it’s quite subtle. It definitely makes a difference but its flavour is not that strong which is probably why the kids don’t mind it.😃 Adding that to the many health benefits it has, it is an amazing spice which I personally should use more often.
For this particular recipe I’ve used carrots, celery, onion and garlic and the flesh of the eggplant. All you have to do is to prep the turmeric rice which is very quick and then stuff the eggplants and place them in the oven for a few minutes. Try serving with some yogurt or even Tzatziki. Anything yogurt-based works wonderful with the eggplant, I think. 😋
