Happy Meatless Monday guys!

Here’s a quick, easy and tasty recipe for those of you, who like me, love grains.
The recipe I made is kind of Greek inspired wheat salad. I know many of you probably have not tried hulled wheat yet, and if you haven’t I strongly recommend it.
Not only it tastes amazing, it’s very filling and apparently has got numerous health benefits.

I usually have it sweet with lots of honey, cinnamon and walnuts, it really tastes divine(will probably post the sweet version too) but basically I wanted to try and make something savoury.
This is really simple, especially if, like me, you’ve cooked the wheat in advance – just cook a pot and store it in the fridge. It usually lasts for a week. Oh, did I mention it helps for weight loss?

Here’s what you need.

Ingredients:
  • 300g/10oz wheat, cooked
  • 150g/5oz black olives
  • 200g/7oz feta cheese
  • 2 red peppers, sliced
For the dressing:
  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt

Preparation:
  1. In a mixing bowl combine the wheat, olives and sliced peppers.
  2. Mix the dressing ingredients together and pour over the salad. Mix thoroughly.
  3. Gently crumble the feta cheese and serve.

Tip: Why not try mixing in some other veggies –  try cherry tomatoes, rocket or even carrots!
