Mummy’s Fast & Easy

As I have mentioned before, I love all grains and like including them in my recipes.
The other day, I was making a chicken soup but instead of adding potatoes and other veggies I added pearl barley.
So this is the recipe of the day – Pearl Barley Chicken Soup.
I also added some chopped tomatoes and I think the result was quite satisfying – tasty, nutritious and healthy soup to feed the family.:)

Here’s what you need.

Ingredients:
  • 200g/7oz pearl barley
  • 200g/7oz chicken, shredded
  • 1 onion, chopped
  • 1 carrot, sliced
  • 300g/10oz tinned tomatoes
  • 5 sprigs fresh parsley, chopped
  • 1tsp dry thyme
  • salt and pepper
Preparation:
  1. Place the chicken in a pot, cover with water and season with salt. Cook on the hob for about 20 minutes.
  2. Add the onions, carrots and barley. Simmer for another 15 minutes and then add the tomatoes. Sprinkle the dry thyme, salt and pepper. Stir gently and leave on the hob for another 5 minutes.
  3. Remove from the hob, sprinkle the fresh parsley and serve!

Tip: Why not try chicken soup with bulgur wheat or quinoa?It is so different but tasty!
