Brown Lentil Soup with Chorizo

Happy Tuesday guys! Finally, I’ve managed t put my Family Weekly Meal Plan and can’t wait to share it with you.

Meal 1 – Simple Lentil Soup with Spicy Chorizo & Fresh Herbs

So, let’s start with the first meal I’ve planned – Lentil Soup. It’s honestly one of the easiest soups to make and my kids love it. I’ve mentioned that before, but we aim to have legumes at least once a week.

To fancy things up a bit, I add some spicy Chorizo & Fresh Herbs.

Meal 2 – Sesame Chicken with Vegetables

I’ve literally just made this and I’m planning to take some photos in a minute so I can share the recipe with you.

It’s more than simple and tasty, probably takes about 20 minutes. I used pak choi, carrots, zucchini and broccoli but any veggies work. Also, it’s a nice way to clean your fridge from any vegetable that are about to go off. 😀

Meal 3 – Spaghetti Meatballs in Sweet Tomato Sauce

We love pasta in our family so I always make sure that I have some in my kitchen cupboard. It’s delicious and is very easy to cook.

So, that’s why I’ve planned to make Spaghetti Meatballs in Sweet Tomato Sauce – this, by the way, is an absolute family favourite. I usually use sausage and lots of Parmesan.

I have not posted this recipe yet but I think I should and I will. 😀

Meal 4 – Scrambled eggs with Sautéed Onions, Peppers & Feta Cheese

We do like to have breakfast for dinner sometimes and this particular dish is just delish. It’s called ‘Mish – Mash’ in Bulgarian and can be enjoyed for breakfast, lunch or dinner. It’s a bit similar to the Shakshuka which I love too. You can find the recipe here 👉 Meatless Monday: Shakshuka with Feta Cheese
