Happy Monday guys! Today’s recipe is Grilled Halloumi & Shrimp Salad – absolutely delicious, packed with veggies and grilled halloumi!

Grilled Halloumi & Shrimp Salad

This is a recipe perfect for the grilling season (again!).  You can have it as a side, starter or even as a main, say you’d like to have a light lunch. I used some raw zucchini and carrots cut into ribbons, ripe avocado and black sesame seeds. The dressing is very simple – fresh lemon juice, olive oil and salt to taste. This adds extra freshness to the salad and makes it even tastier. I actually like to add quite a lot of lemon juice but you can simply make it to your taste. Oh, I also added some iceberg leaves for a bit of extra crunch. The result was pure gorgeousness!

It seems that it’s been all about halloumi recently. This delicious Cypriot cheese is present in so many Summer/BBQ inspired recipes. And no wonder! It is simply delicious, perfect in salads or on its own. I actually found out that my Oven Baked Halloumi Chips have become quite popular which is another proof Halloumi is very ‘trendy’ at the moment. If you’re a Halloumi fan, I’d definitely recommend trying these chips or any other Halloumi recipe below – they are all simply delicious and ridiculously easy to make!
