Happy Meatless Monday guys!

The recipe of the day is here- it’s healthy, tasty, fresh and different – Kale & Orange Quinoa Salad.
As i love combining sweet and sour ingredients I thought that this salad would taste nice and it did.
I absolutely loved it – the kale was salty, dressed in olive oil and the orange was so sweet and juicy.
This is a lovey salad that takes a few minutes but has lots of health benefits and of course, tastes delicious.

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 150g/5ox kale
  • 1 orange, cut into pieces
  • 150g/5oz quinoa, cooked
  • a few chickpeas, if wished
For the dressing:
  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt

Preparation:
  1. In a bowl, simply dress the kale and quinoa in the dressing ingredients and mix well.
  2. Arrange the orange pieces on top and if wished, throw some chickpeas too.
