I am so excited to share with you today’s recipe! It is one of those recipes you try and instantly fall in love with! In this case, the whole family did! I can honestly say this has easily become one of our favourite cakes, if not THE most favourite.

We finished it in no time and enjoyed it not only for dessert but for breakfast and snack as well.

I intentionally used less sugar than usual so it doesn’t turn too sweet. But if you prefer a really sweet flavour, I’d say to go with 200g of sugar.

  • plain floour
  • almond flour
  • butter
  • eggs
  • sugar
  • baking powder
  • extra virgin olive oil
  • yoghurt
  • orange essence
  • blood oranges

Here’s how to make this The Best Blood Orange Cake

Ingredients:

  • 180g plain flour
  • 200g almond flour
  • 3 eggs
  • 150ml yoghurt
  • 120ml olive oil
  • 150g sugar
  • 2tsp baking powder
  • pinch of salt
  • grated zest of 1 blood orange
  • 1tsp orange essense
  • 2 blood oranges, peeled and thinly sliced
  • 2tbsp butter
  • 2tbsp sugar

Preparation:

  • Preheat the oven to 180C.
  • In a bowl, mix all the dry ingredients together. In a separate bow, mix all the wet ingredients.
  • Finally, combine all together to a smooth consistency.
  • Melt the butter and 2tbsp of sugar.
  • Arrange the sliced blood orange pieces at the bottom and sides of a loaf mould and pour over the melted butter and sugar.
  • Pour over the cake mixture and bake in the oven for about 40 minutes.
  • Once cooked, leave on a side to completely cool down, turn upside down, slice and serve!
