Macaroni Cheese Stuffed Pumpkins

I made these cute little pumpkins a few weeks ago and I am finally happy to be able to share them with you. To tell you a secret, these little cuties were actually part of our Halloween decoration. There was barely any flesh, but they’re ideal for stuffing, super flavoursome and just so cute. 🙂

Macaroni Cheese Stuffed Pumpkins

All you need is some macaroni, cheese and spices. I added some bacon but this is optional. If you’d rather go vegetarian, skip the bacon, may be add some broccoli florets or even cauliflower. The recipe is perfect for a busy weeknight, you can even make ahead the mac & cheese and just stuff the pumpkins on the day. Make sure to serve them hot so you can enjoy all that gooey cheesy stuff. 🙂 Serve with some garlic bread and fresh leave salad on a side for a completely delicious dinner. 🙂

What you need:

  • Pumpkin
  • Macaroni
  • Onion
  • Garlic
  • Bacon
  • Butter
  • Flour
  • Milk
  • Cheese
  • Fresh parsley
  • Olive oil
  • Salt and pepper to taste

Here’s how to make these beautiful Macaroni Cheese Stuffed Pumpkins

Ingredients:

  • 3 small pumpkins (I used the Halloween decoration), scooped out
  • 5 bacon strips, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 150g macaroni, cooked
  • 75g butter
  • 2tbsp flour
  • 300ml milk or more if necessary
  • 200g Cheddar cheese
  • 1tbsp olive oil
  • salt and pepper to taste

Preparation:

  • Preheat the oven to 200°C. Place the pumpkins on a baking tray, drizzle with a tiny bit of olive oil and season with salt and pepper. Leave in the oven for about 15 minutes. Remove and leave on a side.
  • Heat the olive oil and gently sweat the onion and garlic for 2-3 minutes. Add the chopped bacon and cook for another 2-3 minutes. Remove from the hob.
  • In another pan, heat the butter, add the flour and gradually start whisking in the milk till a smooth and creamy consistency. Make sure there are no lumps. Season with salt and pepper and remove from the hob.
  • Add the macaroni and bacon to the sauce and mix well. Fold in the cheese.
  • Stuff the pumpkins with the macaroni mixture finishing with some extra cheese on top. Bake in the oven for about 10 minutes. Remove and serve hot!
