Watermelon Feta Salad

Happy Tuesday guys! Recipe of the day is Watermelon Feta Salad – juicy and refreshing, a delicious combination of sweet and savoury, seasoned with fresh mint leaves and extra virgin olive oil. 

Watermelon Feta Salad

This is the perfect Summer salad  to accompany your BBQ. It’s sweet and salty at the same time, crunchy and super fresh. If you like combining sweet and savoury, you’ll love this salad. It’s really simple to make – apart from the obvious watermelon and feta, add some cucumber, onion, and fresh mint leaves. Finally simply drizzle extra virgin olive oil, season with salt to taste and serve. 

You can sub the fresh mint leaves for basil but the feta cheese is a must. So is the extra virgin olive oil. The salad should be enjoyed straight away. The longer you leave it, the worse it gets. So bear in mind that when making it, I suggest making as much as you’re going to eat. Otherwise, it’ll have to go to waste.

As much as I love Summer, it’s been way too hot here and temperatures even reached 40 degrees in some parts of the UK, which is insane. We’ve been craving lots of salads and in general food that keeps us refreshed and energised. The key is using seasonal fruit and veg, or both, throwing some nuts and seeds, adding a source of protein like grilled chicken or prawns and finally… the dressing. The dressing is the most important bit for me. It holds the whole meal together and defines the flavour.  So be creative, the old good olive oil is amazing but maybe try honey mustard, blue cheese, satay, the options are limitless. You’ll be surprised what a difference a good dressing makes.

Watermelon Feta Salad

What you need:

  • Watermelon
  • Feta cheese
  • Cucumber
  • Onion
  • Fresh mint leaves
  • Extra virgin olive oil
  • Salt

Here’s how to make this refreshing Watermelon Feta Salad

Ingredients:

  • 400g watermelon, cut into cubes
  • 250g feta cheese, cut into cubes
  • 1 cucumber, cut into cubes
  • ½ onion, chopped
  • A handful of fresh mint leaves

For the dressing:

  • 2tbsp extra virgin olive oil
  • Salt to taste

Preparation:

  • In a salad bowl, combine all the salad ingredients. 
  • Add the extra virgin olive oil and season with salt and mix gently. Serve immediately.
