Happy Thursday guys! Today’s recipe is Za’atar Roasted Cauliflower on a bed of creamy beetroot hummus, yogurt and chillies. 🙂
What you need:
- 1 small cauliflower
- Za’atar
- chilli peppers
- beetroot hummus
- yogurt
- rapeseed oil
- salt and pepper
What is Za’atar
Za’atar is a popular spice blend from the Middle East. It usually includes toasted sesame seeds, dried sumac, oregano, thyme, marjoram. However, these spices vary depending on where in the Middle East you are.
It is usually enjoyed with pita bread, dipped in olive oil but you can use it on pretty much anything – seafood, beef, chicken, vegetables – rub them with the za’atar, olive oil and salt and roast in the oven – it’s delicious.
Here’s how to make this lovely Za’atar Roasted Cauliflower
Ingredients:
- 1 small cauliflower, sliced in 2 pieces
- 3tbsp beetroot hummus (recipe above)
- 1tbsp yogurt
- 1tbsp Za’atar
- salt and pepper to taste
- 1tbsp rapeseed oil
- 1-2 chilli peppers, sliced
Preparation:
- Preheat the oven to 180°C.
- Rub the cauliflower pieces with the rapeseed oil, Za’atar, salt and pepper.
- Place in a baking tray and add a tiny bit of water so the cauliflower won’t burn.
- Bake for about 20 minutes an let aside to cool.
- To serve it, spread the beetroot hummus and yogurt on a plate, add the cauliflower and garnish with some sliced chillies.
- For a bit more filling lunch/dinner, serve it with some freshly baked bread/crackers to dip into the gorgeous beetroot hummus.
