Happy Friday guys! Recipe of the day is Carrot Cake Muffins – quick and easy to make and absolutely delicious.
If you love carrot cake, you’ll love these carrot cake muffins, for sure. They taste like carrot cake (no surprise here :-))and I topped them up with some chocolate for some extra indulgence. 🙂 You can skip the chocolate if you prefer or use the usual icing. It’s completely up to you, but I’d suggest to try them with a bit of chocolate on top – it gives them a whole different flavour. Also, walnuts are optional too. In case you have an allergy or simply don’t fancy them, just skip that step.
What you need:
- carrots
- butter
- sugar
- eggs
- chocolate
- baking powder
- self-raising flour
- cinnamon
- nutmeg
- cloves
- walnuts
Here’s how to make these delicious Carrot Cake Muffins
Ingredients:
- 140g self-raising flour
- 140g caster sugar
- 140g butter, softened
- 2 eggs
- 1tsp baking powder
- 1tsp cinnamon
- 1tsp nutmeg
- 1tsp cloves
- 2 large carrots, grated
- 100g chocolate, melted
- 80g walnuts, finely chopped
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the sugar and butter until creamy. Add the two eggs and flour, spices and baking powder and whisk again. Stir in the grated carrots and chopped walnuts.
- Empty the mixture into a greased muffin tray and bake in the oven for about 25 minutes. Leave to cool.
- Meanwhile, melt the chocolate and leave to cool.
- Decorate the muffins with the chocolate .
