Happy Wednesday guys! Recipe of the day is Beetroot Avocado Sourdough Toast – served with silky beetroot hummus, this Avocado toast is like no other. 🙂
We enjoyed these yummy toast for Saturday’ brunch and I could not get enough of them. I mean, look at the colours! The main hero here is the beetroot hummus which is my absolute favourite (everything beetroot, too 🙂 ). It adds a bit of a sweetness and earthy flavour to this amazing sourdough toast. You could used cooked beetroot but I recommend to roast it in the oven as the flavour is much more intense. Make a bigger batch and enjoy with salads, wraps, sandwiches or on its own. Especially tasty on this Avocado Sourdough Toast. 🙂
What you need:
- sourdough bread
- eggs
- beetroot hummus (see the recipe link above)
- ripe avocado
- seasoning
Here’s how to make this delicious Beetroot Avocado Sourdough Toast
Ingredients:
- 1 ripe avocado, stone removed and sliced
- 2 slices of sourdough bread, toasted
- 4tbsp beetroot hummus
- 2 eggs, cooked as wished
- salt and pepper to taste
- a touch of chilli flakes, if wished
Preparation:
- Spread the beet hummus onto the toasted sourdough slice(you could spread some butter first, if wished) and arrange the avocado pieces on top.
- Place your egg and season generously with salt, pepper and chilli flakes, if wished.
