Happy Tuesday guys! Recipe of the day is Dark Chocolate Cherry Cake – a gorgeous dark chocolate cake with ripe cherries and white chocolate ganache filling.
What you need:
- egg whites
- egg yolks
- flour
- sugar
- cocoa powder
- baking powder
- vanilla extract
- double cream
- white chocolate
- powder sugar
- fresh cherries
- fresh mint leaves for decoration
Here’s how to make this absolutely delicious Dark Chocolate Cherry Cake
Ingredients:
For the layers:
- 6 egg whites
- 6 egg yolks
- 1tsp salt
- 40g cocoa powder
- 140g flour, sifted
- 1tsp baking powder
- 190g sugar
- 1tsp vanilla extract
For the white chocolate ganache:
- 150ml double cream
- 150g white chocolate
- pink food colouring
For the cream & cherry filling:
- 200ml double cream
- 100ml custard
- 10 cherries, stones removed
For the chocolate ganache:
- 200g dark chocolate
- 200ml double cream
- fresh cherries for decoration
- fresh mint leaves for decoration
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the egg whites with the salt until peaks form.
- Whisk in the sugar, gradually. Then, add the egg yolks, one by one, whisking the mixture meanwhile.
- Stir in the dry ingredients, slowly, using a wooden spoon.
- Pour half of the mixture into a cake tin, covered with baking parchment, greased and dusted with some flour.
- Bake in the oven for about 30 minutes and leave to completely cool. Repeat with the rest of the mixture.
- Once it’s cool, cut the layers in two so you end up with 4 layers. I used three, save the extra on and serve it with some cream for a treat. 🙂
- To make the white chocolate ganache – melt the cream, white chocolate and food colouring and leave to cool and thicken.
- To make the cream and custard filling – whisk the cream until thick, add the custard and mix well.
- For the dark chocolate ganache – melt the dark chocolate and cream and leave to cool and thicken.
- To assemble the cake – on a cake stand place the bottom layer and spread the cream and custard filling on top. Arrange 10-12 cherries (stones removed) and place the middle layer. Spread the white chocolate ganache and cover with the third layer.
- Coat the cake evenly with the dark chocolate ganache.
- Decorate with some cherries and fresh mint leaves.
- Place in the fridge overnight. Remove from the fridge 10-15 minutes before serving.
