Feta Pie with Homemade Filo Pastry

We usually make it for breakfast but it’s great for snacking and can be enjoyed anytime during the day.

It’s not as quick to make as I wished but it’s very simple and totally worth it. Serve it with yogurt on a side for a tasty and filling breakfast.

What you need:

  • flour
  • eggs
  • butter
  • yogurt
  • feta cheese
  • salt
  • water

Here’s how to make this delicious Feta Pie with Homemade Filo Pastry

Ingredients:

  • 500g plain flour
  • 4 eggs
  • 200g feta cheese, crumbled
  • 200g butter, melted
  • 2tbsp yogurt
  • 200ml lukewarm water
  • 1tsp salt

Preparation:

  • In a bowl, add the flour, make well in the middle and pour in about 200ml lukewarm water, 1 egg, salt and about a tbsp butter.
  • Make a smooth dough, transfer on your worktop (dust some flour first_ and knead for about 5 minutes.
  • Divide the dough in 24 balls. Brush them with the melted butter and leave for about 20 minutes to rest.
  • Dust your surface with a bit more flour and roll out each ball to diameter a bit smaller than your baking tray. Divide them equally in two piles (12 in each, brushing them with butter again).
  • In another bowl combine the yogurt, cheese and eggs.
  • Gently place the first pile of rolled out dough in a greased baking tray. Add the cheese filling and place the other half.
  • Bake in the oven for about 40 minutes.
