Mummy’s Fast & Easy

Hola!
After a weekend of BBQs and other indulgences,just guessing, it’s time to take it easy (foodwise) and have a light veggie meal.:)
Recipe of the day is quick and easy eggplant & tomato starter/dip/side dish.
The combination of eggplant, garlic, dill and mayo is so appetising!
You can have it as a dip or even as a main. Just add some crackers, veggies stick or even your favourite bread.

What else can I add – it’s really simple but delicious.:)

Mummy’s Fast & Easy

Ingredients:

  • 2 eggplants, grilled and peeled
  • 2 tomatoes, thinly sliced
  • 200g/7oz feta cheese, crumbled
  • 200g light mayo/7oz
  • 2 garlic cloves, crushed
  • 1tbsp lemon juice
  • a bunch of fresh dill, chopped
  • salt

Preparation:

  1. In a bowl, place the peeled eggplant and cheese and mash.
  2. Add the crushed garlic, mayo and lemon juice. Mix well.
  3. Finally season with salt and stir in the fresh dill.
  4. Arrange the tomatoes on a serving dish and add the eggplant dip in the middle.
  5. Serve with extra dill/.
Enjoy!
Tip: Make sure to drain the eggplants before mashing them, otherwise might be quite watery.
