Happy Wednesday guys! Recipe of the day is Fig & Chocolate Chip Traybake – another day, another dessert with ripe Summer fruit. 🙂 And what a yummy treat that is! :-

You’re probably thinking I’m baking every other day (and you might not be far from the truth). 🙂
The truth is we’ve been lucky to be enjoying lots of Summer fruit recently and the really ripe ones (if not eaten) go into new and delicious recipes as the one above and the ones in the last few posts. 🙂
What you need:
- flour
- butter
- sugar
- eggs
- vanilla extract
- baking powder
- chocolate chips
- figs
Here’s how to make this indulgent Fig & Chocolate Chip Traybake
Ingredients:
- 125g plain flour, sifted
- 125g caster sugar
- 125g butter, melted
- 12-14 ripe figs, cut into halves
- 80g chocolate chips
- 2 heaped tbsp yogurt
- 2eggs
- 1 1/2tsp baking powder
- 1tsp vanilla extract
Preparation:
- Preheat the oven to 190C.
- In a bowl, whisk the butter and sugar until creamy. Add the eggs one by one, yogurt and vanilla essence.
- In a separate bowl, combine the flour and baking powder.
- Add the flour bowl to the wet ingredients and mix well. Stir in the chocolate chips.
- Grease a baking tray with butter and dust a bit of sugar. Arrange the fi halves on the bottom and pour over the cake mixture.
- Bake in the oven for about 25 minutes.
- Leave to cool completely, turn upside down and serve.
