Peach, Mozzarella & Spinach Salad

We’ve been so lucky for the past month here – it’s been really hot hot hot. The sun is shining all the time and it really feels like proper Summer, even too hot at times. So, my point is, my Summer recipe mode is on and hence this lovely salad.

At first, I thought I might use grilled peach, which I absolutely love, but the ones I had were really ripe and soft and not suitable for grilling. Fresh peach with Mozzarella & spinach tastes divine though. 🙂 I also threw some seed mixture for a bit of a crunch.

Peach, Mozzarella & Spinach Salad

For the dressing, I had some balsamic vinegar, salt and lemon juice.

This salad is just perfect for the hot Summer days. You can even use it as a side for your BBQ or as a healthy lunch alternative. All it takes is 5 minutes of your time and three simple ingredients. It’s an absolute no fuss and budget-friendly recipe so you’ve got no excuse not to make it. 🙂

Peach, Mozzarella & Spinach Salad

Here’s how to make this healthy Peach, Mozzarella & Spinach Salad

You need:

1 ripe peach

7-8 mini Mozzarella balls

70-80g fresh spinach

2-3 tbsp mixture of seeds

1tbsp mon juice

1tbsp balsamic vinegar

salt to taste

To make:

Simply mix all the ingredients together, apart from the peach. Add the dressing ingredients and mix well. I have served the peach on a skewer (I just thought it looks really cool) but you can cut it in pieces if you’d like.
