
Happy Monday guys! Recipe of the day is Easy Blackberry Traybake – one of the easiest and most delicious Summer dessert I’ve made.

This super simple but delicious and pretty dessert turned out to be my kids (and not only) favourite this Summer. I baked it just before lunchtime a few days ago and it was completely gone after dinner. 🙂
I already had a request from the family to make another one. 🙂

Blackberries are amazing in bakes and pies but also in savoury dishes.

Serve with dollop of ice cream for more indulgent version or on its own.

What you need:
- blackberries
- flour
- butter
- eggs
- yogurt
- baking powder
- sugar
- vanilla extract

Here’s how to make this lovely Easy Blackberry Traybake
Ingredients:
- 125g plain flour, sifted
- 125g caster sugar
- 125g butter, melted
- 300g fresh blackberries
- 2tbsp yogurt
- 2eggs
- 1 1/2tsp baking powder
- 1tsp vanilla extract

Preparation:
- Preheat the oven to 180C.
- In a bowl, whisk the eggs and sugar until creamy. Add the eggs one by one, yogurt and vanilla essence.
- In a separate bowl, combine the flour and baking powder.
- Add the flour bowl to the wet ingredients and mix well. Stir in the blackberries.
- Grease a baking tray with butter and dust a bit of flour. Pour in the mixture and bake in the oven for about 25 minutes.
- Leave to cool, cut into squares and serve upside down.
