Happy sunny Monday guys! The tasty recipe of the day is Rhubarb Strawberry Mini Galettes – one of my top fav desserts this season!
What you need:
- rhubarb
- strawberries
- sugar
- butter
- flour
- yogurt
- salt
- brown sugar
- vanilla essence
- vanilla ice cream to serve
I must admit, I’never cooked rhubarb before and I’ve been missing a lot! This beautiful vegetable is delicious and just perfect in desserts.

Here’s how to make these beautiful Rhubarb Strawberry Mini Galettes
Ingredients:
- 200g fresh rhubarb, cut into chunks
- 10-12 strawberries, sliced
- 80g caster sugar
- 2tbsp brown sugar
- 1tsp vanilla essence
For the dough:
- 300g plain flour
- 150g butter, melted
- 1 cup yogurt
- a pinch of salt
Preparation:
- Heat a pan with the rhubarb and sugar. Once the sugar is melted, lower the heat and leave to simmer for about 15 minutes.
- Add the sliced strawberries, vanilla essence and leave for another 5 minutes stirring. Leave to cool.
- To make the galette dough, combine all the ingredients together and refrigerate for 30 minutes.
- Dust your working surface with a bit of flour. Divide the dough into four balls and roll them out into circles, about half cm thick.
- Arrange the rhubarb and strawberries in the middle – make sure to leave about a finger and a bit at the edges so you can close the galettes. Sprinkle some brown sugar over the dough.
- Bake in the oven for about 20 minutes or until ready.
- Serve warm with a scoop of vanilla ice cream.
