Happy Monday guys! Recipe of the day is No Bake Snickers Cheesecake – indulgent and very easy to make dessert.
What you need:
- oreo biscuits
- butter
- cream cheese
- peanut butter
- powder sugar
- sea salt
- salted peanuts
- double cream sugar
- dark chocolate
- milk chocolate
- snickers bars
Here’s how to make this indulgent No Bake Snickers Cheesecake
Ingredients:
- 2 x 154g oreo biscuits, crushed
- 150g butter
- 400g cream cheese
- 200g crunchy peanut butter
- 2tbsp powder sugar
- 300ml double cream
- 200g dark chocolate
- 100g milk chocolate
- 100g salted peanuts, chopped
- snickers bars, cut into pieces for decoration
For the salted caramel:
- 80g butter
- 100g sugar
- 150ml double cream
- 1tbsp sea salt
Preparation:
- Preheat the oven to 190°C.
- Combine the Oreo biscuits and butter, arrange on a 26cm cake tin lined with baking parchment and bake for 10 minutes. Leave to cool down completely and refrigerate for an hour.
- To make the cheesecake layer, whisk the cream cheese, peanut butter and powder sugar until creamy.
- Arrange around 15 bite-sized Snickers pieces and add the cheesecake layer. Place in the fridge for another hour or more.
- To make the chocolate ganache layer, heat the double cream, remove from the hob and add the dark and milk chocolate, stirring to incorporate them. The mixture should be smooth and creamy. Leave for about 3 hour to cool and thicken then add on the cheesecake layer.
- For the salted caramel, heat a pan with sugar and once it’s melted add butter and bits by bits the double cream. Sprinkle the sea salt. Make sure to whisk constantly. The mixture should cool down completely before adding on the cheesecake.
- Cover the edges of the cheesecake with the salted caramel, sprinkle the chopped peanuts and add some Snickers pieces. Refrigerate overnight before serving.
