Happy Thursday guys! Recipe of the day is Leek & Butter Bean soup -really simple but very satisfying soup!
I think leek is one of the ingredients that people either love or hate. I’m definitely from the first ones. I’ve had a lot of eggs and leek in my childhood, which was my dad’s special. I enjoy it in every recipe I’ve tried but mostly with eggs and in a soup. It’s also delicious in bakes and pies. It’s such a simple ingredient but it gives so much flavour to the dish. And guess what, it’s in season so why not give this yummy soup below a try? 🙂 It is ridiculously easy and uses two ingredients, literally – butter beans and leek.
What you need:
- leek
- butter beans
- olive oil
- butter
- walnuts
Here’s how to make this beautiful Leek & Butter Bean Soup:
Ingredients:
- 2 leeks, thinly sliced
- 280g butter beans, cooked
- 1 cube vegetable bouillon
- 2tbsp olive oil
- slat and pepper to taste
To garnish:
- chopped walnuts
- chickpeas
- kale
Preparation:
- Heat a pot with the olive oil and gently sweat the leek. Add salt and pepper to taste. Add the vegetable bouillon and about a litre of water.
- Stir in the beans, lower down the heat and cook for about 20 minutes.
- Leave to cool and blend the soup.
- To serve – top it up with some chopped walnuts, chickpeas and kale, if wished.
