Mummy’s Fast & Easy


The recipe of the day is one of the simplest ones for fish pie. It’s done in just a few minutes and is definitely a family favourite.

There’s lots of leek and tarragon which only make the pie tastes sweeter and aromatic.
I used a bag of seafood mix, I recommend getting one of these – there are mussels, different fish, seafood sticks and other sea stuff in it.:)
If you prefer specific fish, that is fine. Just make sure to add some mussels, shrimps or whatever you like so there’s a nice seafood mix.
Here’s what you need.

Ingredients:
  • 1lb seafood mix
  • 2 leeks, sliced
  • 1 cup double cream
  • 1tbsp olive oil
  • 5-6 sprigs fresh tarragon
  • salt and pepper
  • 1-2 a baguette, sliced
  • butter

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. Heat a pan with the olive oil and add the leek. Sweat for about 5 minutes.
  3. Add the seafood mix and season with salt, pepper and tarragon. Mix well.
  4. Cook for 5 minutes, add the cream and leave for another 5.
  5. Transfer the mixture into a greased baking tray. Arrange the bread slices and spread some butter on each one of them.
  6. Cook in the oven for 15 minutes or until the fish pie is ready.

Tip: Try adding 1/2 a cup of white wine in the fish pie.
