Happy Saturday folks! Today’s recipe is Layered Tuna & Beetroot Salad – a colourful and tasty meal. 🤤
To be honest with you, I had planned a different salad to make that day but I realised I was missing a very important ingredient. So I had to improvise and this is what I came up with. This tuna salad is so filling it could easily go for a main, just add a piece of bread if you’re really hungry. I’d like to call such salads ‘Winter salads’, they’re not that light but still taste amazing. It’s also super simple to make and you still get your five a day. 😄
What you need:
- tinned tuna
- cooked beetroot
- carrots
- eggs
- mayo
- avocado
- red onion
- lime
Here’s how to make this delicious Layered Tuna & Beetroot Salad:
Ingredients:
- 1 tuna tin, drained
- 1 ripe avocado, mashed
- 1 red onion, chopped
- 3 boiled eggs, finely chopped
- 2 carrots, par-boiled and grated
- 2 beetroots, cooked and grated
- 30g parsley, chopped
- 2tbsp mayo
- 1tbsp fresh lime juice
- salt and pepper to taste
Preparation:
- In a small bowl, combine the eggs with mayo and mix well.
- In another bowl mix the avocado with parsley, red onion, lime juice and season with salt and pepper to taste.
- To build the salad, use a ring – on a serving plate add the egg mixture, grated beetroot, tuna , carrots and avocado. Press gently, take the ring out and serve.

I suppose this is healthy, but I find that beet juice “bleeding” all over everything, especially down into that egg salad a real turn-off. I might try it without the beets.

Thanks for your comment. I totally agree with you, beets give so much colour (literally)to everything they touch. While it might be pretty for some, for others, this is not the case. 😊
You could leave them out but also I’d suggest to arrange them at the bottom, then add the carrot layer and the rest of the layers.
