We all have days when we don’t feel like doing anything, especially cooking.
Yes, even me, rarely, but yes, I have one of these days too.
But here’s what I do to make my life easier, and hopefully yours too.
Prepare in advance a few baked potatoes(depending on how big your family is) and stick them in the fridge.
When you’re having one of those days, just take them out, top them with whatever you like(tuna, ham, beans, cheese, veggies) and heat them up.
No cooking needed but at the same time you’ve got your family a tasty dinner. These are also good for lunch, sides, starters.
I topped them up with tuna, corn and yogurt. Tried to stay out of the cheese on purpose and used yogurt instead. And it is actually very tasty, I even had some extra yogurt on a side.

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 4-5 sweet potatoes, baked
  • 200g/7oz tinned tuna in sunflower oil
  • 150g/5oz tinned corn
  • yogurt 
  • chives, if wished

Preparation:
  1. Make a cross on the potatoes and stuff them with the tuna and corn. I heated the potatoes before filling them but if you prefer you can heat them up when stuffed.
  2. Drizzle with some yogurt and sprinkle chopped chives, if wished.
