How about a guilt free cheesy pizza this Meatless Monday?
Is it possible?
Yes, thanks to whoever invented the cauliflower crust pizza.
There are so many different recipes out there for the cauliflower crust pizza so I had to try that out too.
It is delicious! It’s difficult to describe it, you should really try it out. I mixed the cauliflower with some grated cheddar and topped it up with mushrooms, mozzarella and fresh spinach.
And then, I ate half of the pizza by myself!
Bottom line, I will be making this a lot!

Here’s what you need.

Ingredients:
  • 1 cauliflower (about 500g/1lb)
  • 150g/5oz grated cheddar  cheddar
  • 150g/5oz mushrooms, sliced
  • 300g/10oz mozzarella, sliced
  • 1 egg
  • 1 cup passata
  • a handful of fresh spinach

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. Blitz the cauliflower in a food processor. Add the egg & grated cheese and mix well. Most of the recipes suggest to warm the cauliflower up a bit in the microwave and then drain the excess water. It is a good idea to do this step if you don’t want your pizza crust to be a bit watery and mushy. Well, I didn’t do it on purpose and I still liked it very much. May be next time I’ll drain it.
  3. Layer the cauliflower mixture on a greased baking tray and bake in the oven for about 20 minutes.
  4. Remove from the oven, spread the passata and arrange the mushrooms and mozzarella on top.
  5. Bake for another 15 minutes, remove from the oven, throw some spinach leaves on top and serve!
