Happy Tuesday guys! Recipe of the day is Cauliflower Salad with Orange Dressing – fresh, tangy & crunchy, basically everything you need in a salad this January. 😄
Let me start by telling you how much we looove this salad. It is simply delicious! I have just started making it recently but I’ve already made it quite a few times. The orange dressing is to die for! It brings such freshness to the salad and no matter how strange it may sound to some of you, it just works wonders with the mustard and cumin. I, myself, was a bit skeptical the first time around. But a huge part of being a foodie is the desire to try everything so I was really curious and couldn’t wait to make this beautiful, packed with vitamins salad.
What you need:
- cauliflower
- carrots
- walnuts/pecans
- orange
- sour cream
- mustard
- vinegar
- olive oil
- cumin
- salt and pepper
Here’s how to make this Cauliflower Salad with Orange Dressing
Ingredients:
- 1 cauliflower, cut into florets
- 5 carrots, grated
- 50g walnuts or pecans, roughly chopped
For the Orange dressing:
- 1 orange, juice only
- 2tbsp Dijon mustard
- 2tbsp olive oil
- 1tbsp white wine vinegar
- 3-4tbsp sour cream
- 2tsp cumin
- salt and pepper to taste
Preparation:
- Combine all the dressing ingredients, apart from the sour cream and whisk well.
- To arrange the salad – in a serving plate, start with a layer of cauliflower, then add a layer of carrots. Repeat one more time.
- Pour over the dressing. Add a few spoons of sour cream on top and sprinkle the chopped walnuts.
