Happy Wednesday guys! Recipe of the day is Christmas Tree Cake – delicious sponge layers with cream cheese frosting, covered with chocolate ganache. 🤤
It was a real treat and we all enjoyed this pretty cake so so much! It’s quite easy to make and assemble. All you have to do is to cut out a Christmas tree from the sponge, add some frosting in between and cover in chocolate ganache.
For me, the star was the sponge. I have never had/made such a good sponge. We happily ate the little pieces left from the cutting. Decorate with some berries and you’ve got yourself a lovely Christmas Tree Cake that would be very appreciated not only byt the kids but by the grown-ups too. 😄
What you need to make the Christmas Tree Cake
- eggs
- flour
- sugar
- cream cheese
- baking powder
- yogurt
- salt
- double cream
- green food colouring
- icing sugar
- vanilla extract
- butter
- chocolate
- raspberries for decoration
Here’s how to make this gorgeous cake
Ingredients:
For the sponge:
- 250g butter
- 250g caster sugar
- 200g self-raising flour
- 4 eggs
- 150g yogurt
- 1tsp baking powder
- 2tsp vanilla extract
For the chocolate ganache:
- 150g chocolate
- 150ml double cream
For the green cream cheese frosting:
- 200g cream cheese
- 100g icing sugar
- green food colouring
- raspberries for decoration
Preparation:
- Preheat the oven to 180°C
- In a bowl, beat the butter and sugar together until creamy then slowly add the eggs, one by one
- Fold in the sifted flour, vanilla, baking powder and yogurt
- Grease a 30×20 traybake, tip the mixture in and bake in the oven for about 25 minutes
- Leave on a rack to cool completely
- For the chocolate ganache, melt the cream and chocolate together
- For the cream cheese frosting, whisk all the ingredients together
- Split the sponge in two layers and cu them into a Christmas tree shape
- Spread half of the cream cheese frosting on the bottom layer and add the top one
- Cover with the chocolate ganache and decorate with the raspberries and the rest of the green cream cheese frosting
- Refrigerate for a couple of hours before serving
