Happy almost weekend guys! Today’s recipe is Pomegranate Pumpkin Salad – quick, easy, healthy and my absolute favourite this season! 👌
It’s funny how I switch on weekend mode once it’s Thursday. 🤪 I know, technically, there are a couple of more days but who cares. 😀
Let’s get to the recipe now..The ingredient that really makes the salad so yummy is the Pomegranate. That amazing fruit is just delicious and I am completely in love with it. 😍 We eat a good amount of pomegranates during the cold months. I have found the easiest and quickest method for me to remove the skin – cut it in half, get a big bowl and smack the pomegranate halve with a wooden spoon. It takes less than 5 minutes. I usually do a couple, put the seeds in a bowl and dig in. Love it.
Apart from enjoying it on outs own, I use pomegranate in salads. Here are the ones I like:

What you need:
- pomegranate
- black quinoa
- feta cheese
- pumpkin
- pumpkin seeds
- olive oil
- salt
- vinegar
Here’s how to make the Pomegranate Pumpkin Salad
Ingredients:
- 1 pomegranate, seeds only
- 200g feta cheese, cut into cubes
- 300g roasted pumpkin, cut into cubes
- 150g black quinoa, cooked
- 50g pumpkin seeds
- 2tbsp olive oil
- 1tbsp wine vinegar
- salt to taste
Preparation:
- In a bowl, combine the quinoa, pumpkin & feta cheese. Drizzle with olive oil, vinegar and add the salt. Mix gently.
- Add the pomegranate seeds, mix it all together, sprinkle the pumpkin seeds and serve.
