Happy Friday guys!
Thanksgiving is just around the corner and I believe most of you have planned your menu but if you haven’t or still need ideas, read further.
Today’s recipe is just for you – simple and tasty, these stuffed pomegranates are super attractive and healthy.
They’re stuffed with quinoa, feta cheese and of course pomegranate seeds.
It’s a perfect side dish to accompany your masterpiece (Turkey)!

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 2 large and ripe pomegranates, cut in halves and seeds removed
  • 400g/1lb quinoa, cooked
  • 400g/1lb feta cheese, cut into cubes
  • 1/3 cup extra virgin olive oil
  • 1 lemon, juice only
  • salt
  • dry thyme for decoration, if wished

 Preparation:

  1. In a bowl, mix the quinoa with the pomegranate seeds and feta cheese.
  2. Combine the dressing ingredients in a separate bowl and mix them well.
  3. Pour over the salad and mix gently.
  4. Stuff the pomegranate halves with the quinoa salad and sprinkle dry thyme on top, if wished.
