Happy Wednesday guys! Today’s recipe is Asparagus & Parsley Pesto Gnocchi – a healthy and delicious meal, grown-ups and kids approved!
It seems that I’ve been really focused on strawberries and asparagus recently. 😆 Well, after the series of Mackerel recipes though. 🤣 But as you might already know I love seasonal cooking and plan my recipes according to whatever the season offers. So, as we are well into strawberries and asparagus season, I couldn’t wait to share what I’ve made the other day.
However, the star here is the Parsley Pesto. I am probably biased but it’s even tastier than the basil one or at least as tasty as the basil pesto. Parsley’s one of the herbs I make sure is always available in my kitchen whether in the fridge or in a pot. I add parsley to almost everything (apart from deserts 😀) so it was finally time to make this pesto. I have basically swapped the basil for parsley, everything else stays the same.
You can actually make a big batch and store it for a few days in the fridge. It’s perfect with pasta, meats, sandwiches and wraps. I love the vibrant green colour, it kind of makes me think of Summer! I actually made a Caprese salad on the weekend with the parsley pesto and it was so delicious. Don’t get me wrong though, basil is delicious too!😃
