Happy Meatless Monday!

The recipe of the day is quick and easy tart packed with vitamins, minerals and whatnot.
It is topped with asparagus, cherry tomatoes, feta cheese and  quail eggs.
The thing is, I actually had some hard boiled quail eggs in the fridge which I decided to throw on the tart.
Apparently, these are about 4-5 times healthier than chicken eggs and fight allergies! Isn’t that great! So make sure you stock on some of these goodies.

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 400g/1lb puff pastry
  • 300g/10oz asparagus, half cooked( I cooked them in the oven with some olive oil and salt for about 10 minutes)
  • 200g/7oz feta cheese
  • 6-7 quail eggs, boiled
  • 7-8 cherry tomatoes
Preparation:
  1. Preheat the oven to 200°C/394°F.
  2. Roll out the pastry and place on a greased baking tray.
  3. Start arranging the asparagus, cherry tomatoes and crumble the feta cheese.
  4. Bake for about 20 minutes or until ready.
  5. Cut the quail eggs in halves and throw on top of the tart.

Tip: Why not try adding some mozzarella cheese too!
