How’s your Summer going so far? Mine is actually quite busy and I can’t believe we’re actually well in August. It’s crazy but the time does fly. 😂

Let’s focus on the recipe now..

What I used to make these bad boys – red peppers, carrots, celery, pak choi, fresh lemon juice, light mayo and just a tiny bit of chicken. There’s lots of fresh veggies and a bit of chicken hence less calories.

I’d lie if I say the children loved these but we kind of found a way to make them at least try. I let them ‘build their own wraps’ which they really like. I bet they think it’s more of a game, but if it works, then it’s fine with me. And it does. I arrange the ingredients in small bowls, give them the tortilla bread and then let them pick their own ingredients, with a bit of encouraging, of course 😂. For us, the grown ups, we get the whole pack 😃.
