Happy Saturday guys! Today’s post is not actually a recipe but my Family Weekly Meal Plan!
I’ve been meaning to do this for a long time and finally the day has come.
So, to begin with, I make this plan every week. It honestly makes things so much easier and I must say it’s compulsory in our family. Otherwise, it’s an absolute chaos (food wise) – we end up eating junk food and spending more than we’ve planned on not so healthy (and tasty) meals.
As a family of five it’s really important for me to be able to make tasty, healthy and at the same time simple and speedy meals. It almost sounds impossible, right! 🙂 But with a bit of planning and organising it is!
So let’s start with my Family Weekly Plan.
I’ve planned four recipes for next weeks. Why four? Well, usually on the weekends we either eat out, have a takeaway or get some food delivered. That leaves us with five days. However, to ensure there’s no food wasted, a day or two we have leftovers. I might even try to remake them( say I’ve got some sausage left, I’d make pasta or pizza) but often we just have it as it is because it simply taste delicious (as everything I cook :-), just joking!)
Meal 1 – Simple and Speedy Lasagna
OK, so the lasagna on the picture is made with Mascarpone, but quite similar to the one I’m planning to make. The Simple & Speedy Lasagna is a simplified version of the classic lasagna which uses creme fraiche. It’s much quicker and the taste is still amazing. And it’s an absolute family favourite:-)
Meal 2 – Baked Tuna Meatballs
Now, this seems to be one my most popular recipes. It’s not only delicious but it’s soooo simple, everyone can make it. And there’s no frying involved! But rest assured, these meatballs are juicy and succulent as the fried ones, just healthier. 🙂 Check the recipe here: Baked Tuna Meatballs
Meal 3 – Lemon & Herb Spatchcock Chicken with Potato Salad
Who doesn’t love a good roast? I prefer making the spatchcock version as it’s easier to cook, in my opinion, and crispier. 🙂 I’ll serve this with yummy potato salad that is super simple to make. As we can’t finish the whole chicken I like to use the leftovers for a soup, salad or wraps.

Meal 4 – Leftover Chicken & Vegetable Soup
So I’ve planed to make a chicken soup from the leftovers. Using already cooked meat for it makes it so much quicker and simpler. All I have to do is to boil some veggies, add spices and some shredded chicken. We love a tasty soup in our family, so I always make sure I make one every week.
