It seems the weather got cold sooner than we expected or at least than I expected.
I was freezing today and I wish I had my winter coat and hat on(I was that cold).
So to get warm and cosy I’ve made this tasty lentil soup with spicy chorizo – it will melt your heart and make you love the cold weather(or maybe not).
It’s more than simple to make and really quick.
Here’s what you need.
Mummy’s Fast & Easy
Ingredients:
400g/1lb brown lentils
2 carrots, peeled and roughly chopped
1 onion
2 garlic cloves
3 celery stalks, chopped
2tbsp sunflower oil
1tbsp paprika
1tbsp thyme
1tsp cumin
salt
2 pieces chorizo, cooked and sliced for serving
yogurt for serving
fresh parsley for serving
Mummy’s Fast & Easy
Preparation:
Place the lentils, carrots, onion, garlic and celery in a pot and cover with water. Simmer for about 20 minutes or until the ingredients are soft so you can blend them.
Add the spices and olive oil and gently stir. Blend the mixture but not completely.
To serve – add a spoon of yogurt and throw a few chorizo pieces on top, sprinkle some fresh parsley.

Tip: For a vegetarian version try adding some crumbled feta cheese on top instead of the chorizo.
