I love adding fruit to my salads. It’s kind of making them taste fresher and healthier, plus it’s a great way to eat your fruit, isn’t it?
Blueberries taste delicious and are known for their health benefits (such as being antioxidants) so why not add them to your salad.
And combined with another superfood – kale, you’ve got a superfood salad!
I’ve added some blue cheese and grilled chicken to make it more filling and nutritious.
If you prefer, or you’re a vegetarian just skip the chicken.
