Happy freezing Monday!
After a few warm and sunny days it’s freezing cold and dull again.
And I was thinking this was over.
Anyway, to warm your senses and bring some colour at your home, here’s the Meat free Monday recipe – Cheesy Pumpkin Cups without any flour!
All you need is just cooked pumpkin, Camembert and an egg!
What a delight in just a few calories. It’s a great snack/side or even main. 
And it took me about 3-4 minutes to prep and 20 minutes to cook.

OK, no more convincing, here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 400g/1lb pumpkin, cooked and mashed
  • 200g/7oz Camembert
  • 1 egg
  • 150g/5oz semolina
  • 2tbsp olive oil
  • salt
  • pumpkin seeds, if wished

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. Mix the pumpkin, egg, olive oil and semolina. 
  3. Add a bit of salt and crumble the Camembert cheese. Add pumpkin seeds, if wished.
  4. Grease a muffin tray and pour in the pumpkin mixture. Bake in the oven for about 20 minutes or until ready.

Tip: If you’re not fan of Camembert, try using Feta cheese instead!
