Who doesn’t love pasta, right?!

It’s one of the favourite recipes for lots of families, I’m sure!

I love it myself, but from the pasta recipes I’ve tried I’ve got two that are the best ones.
And today I’m sharing one of them – Pappardelle with Chestnut Mushrooms, Cherry Tomatoes and Ham.
It’s so creamy and juicy that I feel like having a portion right now.:-)

My pasta recipe is inspired by the famous Italian chef Gino D’acampo.
I usually use tinned cherry tomatoes, as in the original recipe and I think it tastes better that way.
However, this time, I decided to try some fresh cherry tomatoes.
Don’t get me wrong, it’s still super yummy, but you’d better try it out for yourself!

Here are the ingredients.

Ingredients:

  • 400g/14oz egg pappardelle
  • 1 onion, chopped
  • 200g/7oz cooked ham, diced
  • 150g/5oz cherry tomatoes, cut in halves
  • 150g/5oz chestnut mushrooms, sliced
  • 200ml/1 cup double cream
  • 2tbsp olive oil
  • salt and pepper
  • Parmesan

Preparation:

  1. Heat a pan with the olive oil and add the onions and mushrooms. Cook for 5 minutes.
  2. Add the ham, tomatoes and cream. Season with salt and pepper and leave for about 10 minutes.
  3. To prepare the pasta – in a pot, cover with salted water, Bring to the bowl and simmer for 5 minutes. Always check the instructions on the back of the pack, as they may vary.
  4. Add the pasta sauce to the pot with pappardelle and stir well.
  5. Sprinkle some grated Parmesan when serving.

Tip: Why not sprinkle some dry oregano?It’s perfect with pasta dishes!
