The original idea was a bit different to be honest, but I think it actually got better this way. Much better. πŸ™‚ I topped this massive burgers/open sandwiches up with a poached egg and a splash of spicy sauce. There are chunky grilled halloumi pieces underneath the egg and a few on top, hence the double halloumi burger or should I say open sandwich? A bit confused about what to call it. πŸ™‚ I used toasted english muffins and loads of tapenade.

Let me tell you about the tapenade..I only recently discovered it but I feel I can’t get enough of it. It is so delicious that I generously add it to everything – salads, sandwiches, pasta. I really enjoy it as a dip too with some homemade pita chips. To make the tapenade I also added a few sun-dried tomatoes. They really make a big difference (in my opinion) and make it all taste even more delicious. Tapenade is great for tapas and nibbles which I’ve been obsessing recently, especially during the weekends. But seriously, what’s not to love about tapas? Lots of small and cute looking dishes to choose from. Thus, there’ll be a little something for everyone, plus you get to enjoy a few different dishes. That’s the food lover in me talking. πŸ™‚ My family love this kind of dinner too so everything is working fine! πŸ™‚ And most of the time there are no leftovers at all. πŸ™‚

Double Halloumi Burger with Tapenade

Ingredients

  • 2 English Muffins, cut in halves and toasted
  • 200g halloumi, cut in pieces and grilled
  • 2 eggs, poached
  • rocket salad for serving, if wished
  • For the tapenade:
  • 150g black olives, pitted
  • 1 garlic clove, crushed
  • 1-2 anchovy fillets
  • 3-4 sun-dried tomatoes
  • 1tbsp capers
  • 1tbsp lemon juice
  • 1tbsp olive oil
  • salt and pepper

Instructions

  1. To make the tapenade, simply blitz the ingredients in a food processor till a desired consistency - chunky or smooth.
  2. To build the burger, start with the muffin bottom, add a generous amount of the tapenade, a few pieces of the grilled halloumi cheese and finish it off with a poached egg. If wished, close the burger with the other half of the muffin. Repeat with the other english muffin.
  3. Serve with some rocket salad on a side and some spicy sauce.

The series with grilled veggie salads continue! πŸ™‚ Just joking! The thing is I spotted some ripe British strawberries while doing my weekly shopping and had to get a few packs. The strawberries I get are usually imported so you can understand my excitement when I saw these strawberries (they usually come around this time of the year). πŸ™‚

OK, let’s focus on the salad then. I find the sweet and sour combination very tasty! Apart from the strawberries and grilled zucchini, there’s also feta cheese, apricots, a few chopped up pecans and some freshly chopped basil. This is what I call a beautiful Summer salad. It’s so light and tasty, just perfect to have on a hot summer day, probably with a nice glass of white. πŸ™‚ You can have it as a quick snack too. It’s needless to say it’s healthy and low in calories. The downside is you can’t really store it for more than a day. I recommend consuming it straight after preparations. The fruit will get soggy and even might go off so have it fresh and make sure to finish it all. πŸ™‚ That was not a problem for me. πŸ™‚

Ingredients

  • 200g strawberries, sliced
  • 2 apricots, sliced
  • 1 grilled zucchini, cut in pieces

  • For the dressing:
  • 1tbsp olive oil
  • 1tsp lemon juice

Instructions

  1. In a bowl, combine the fruit and zucchini together and mix well.
  2. Add the feta cheese, pecans and basil and mix again.
  3. Serve with the dressing on a side.

And because it’s the grillingΒ season I think this salad will be a great addition to any BBQ. No matter what you’re making – fish or meat, this beauty will compliment both. Use as a side or as an appetizer before serving the mains, you won’t go wrong.

I kept the dressing simple as I wanted the salad to be this way – fresh and simple. So I used some olive oil, lemon juice and salt.

The pecans add a crunchy bite to it that I love in salads. Pecans seem to work quite well with fruit. You can use walnuts, too. Just add a few on top for some extra crunchiness. πŸ™‚

Oven Baked Halloumi Chips with Herbs

I can’t believe I haven’t tried this before. Honestly, I do get a lot of halloumi cheese in my shopping but I usually grill it and toss it in salads. These halloumi chips are a different story. Of course, they taste like halloumi but at the same time they are different. They’ve got crispy coating which consists of stale rye bread, seasoning and herbs. Yes, stale bread. For some reason, my family is not really keen on bread so almost every time I get a loaf, more than half of it is left. This is how I started making breadcrumbs – simply blitz the bread in a food processor voila, perfect breadcrumbs. I usually sore them in a container in the fridge, really handy. So my point was… I added some dry garlic, parsley and thyme and seasoned with salt and pepper. Be easy on the salt though, the halloumi is already quite salty.

And the best part is there is no frying which makes these chips healthier and easier to make. I guess they would taste a bit too greasy when fried anyway, so oven baked is much better.

I couldn’t escape of not making any mayo based dip again. Really, what’s with me and these dips. I’m telling you, I’ve been making lots of these and eating them too. Β I had the halloumi chips with spicy mayo and the combination was so yummy.

So yummy that I didn’t realize how a generous portion of the chips and dip was gone in a few minutes. Well, I was actually watching TV. It’s always a bad idea to have food while watching TV. You’ll be surprise how quickly the food is gone. πŸ™‚

  • 250g Halloumi cheese, cit into chips
  • 1 egg, beaten
  • 2tbsp breadcrumbs
  • 1tbsp dry parsley
  • 1tbsp dry thyme
  • 1tsp dry garlic
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 200Β°C.
  2. Mix the breadcrumbs with the seasoning.
  3. Dip the chips into the egg mixture and then cover them in the breadcrumbs and seasoning mix.
  4. Arrange them on a greased baking tray and place in the oven for about 15 minutes until crispy and golden.

I’ve actually made the salad in advance and then thought it would be a good idea to have it in a wrap. The salad was quite similar to the one here –Β MM: Grilled Vegetables & Halloumi Bulgur Salad, almost the same actually. All I added was some chickpeas and grilled halloumi, oh and some sweet tomato sauce.

The result was really tasty and quite filling. These wraps are not only healthy but they will keep you full for longer. And that was a great way for me to clean up my fridge. πŸ™‚ Every timeΒ I do that the result is quite delicious. πŸ™‚

I absolutely hate wasting food so I make sure I use every bit of food left in my fridge. Well, sometimes this is not possible but most of the time I manage to use everything I have left. πŸ™‚

They’re perfect for a healthy lunch or a snack on the go. Why not make a few ahead and sort your lunch during the week. I actually really recommend prepping your lunch in advance, of course if it’s possible. From what I know and have experienced quite often as I’m starving I grab not so healthy and tasty options which I usually regret afterwards. However, If there’s a healthy meal ready in the fridge, I’m more than happy to satisfy my hunger with it. Not only that, but making your meals in advance saves me a lot of time. By the time I collect the kids from nursery and we get home, we are all starving. But my first priority is to settle them for lunch and feed them. If there’s nothing prepped for me I usually grab whatever I find in the fridge, which as I mentioned might not be the best option. πŸ™‚

  • 4-5 flour tortilla wraps
  • 1 grilled zucchini, sliced
  • 1 grilled eggplant, sliced

  • 2tbsp olive oil

I remember there was a restaurant I used to go (years ago) and they served similar potato balls which I absolutely loved. That was the reason I used to go there, actually. They had a few different ones but the cheesy ones were the best. This is where my inspiration came from. πŸ™‚ And because my kids love potatoes I had to come up with a new recipe, otherwise they can keep eating chips (not that they mind that at all). πŸ™‚

But these potato balls are much healthier, they are oven baked, and they’ve got ‘green stuff’ (peas). My kidsΒ dislike almost everything green apart from peas so that was the only option I had. πŸ™‚

These balls are really easy to make, boil some potatoes, make balls with cheese and peas centre and generously cover with Parmesan. Bake in the oven and then enjoy! They’re delicious with sour cream or even some mayo on a side.

  2. In a bowl, mixed the potatoes with olive oil, salt and pepper.
  3. Make balls and stuff them in the middle with a few cubes of the Cheddar and peas.
  4. Dip them into the beaten egg and then cover with the Parmesan cheese.
  5. Arrange on a greased baking tray and cook in the oven for about 20 minutes or until golden.
  6. Serve with some sour cream on a side.

Sun-Dried Tomato Hummus with Homemade Pita Chips

As I mentioned in my previous post, I love sun-dried tomatoes and I always make sure I’ve got a jar of them in my kitchen cupboard.

I’ve been meaning to make this hummus for a long time. I’ve wanted to try a sun-dried tomato dip, so why not make a hummus then, right?

This was really simple – chickpeas, tahini, garlic, lemon, salt and of course the sun-dried tomatoes.

To go with it I had some wholemeal pita chips. They were perfectly crunchy and just couldn’t imagine this lovely dip with anything else.

I really should start making the pita chips more often, they are tastier, and I bet healthier than the shop-bought ones. All you need is pita bread, cut into chips. A bit of olive oil and some spices you fancy then 5-10 minutes in the oven and you’ve got a great movie snack! πŸ™‚

Ingredients

  • 200g sun-dried tomatoes
  • 200g chickpeas
  • 2tbsp tahini paste
  • 1 garlic clove, roasted
  • 2tbsp lemon juice
  • 3tbsp olive oil
  • salt to taste
  • For the Wholemeal Pita Chips:
  • 4-5 pita breads, cut into chips
  • 1tsp dry parsley
  • 1tsp dry thyme
  • 1tbsp olive oil
  • salt to taste

Instructions

  1. To make the hummus - simply blitz all the ingredients in a bowl until a smooth consistency. Add as much water as you'd like, for a thick consistency, less and if you prefer the opposite, add more.
  2. For the pita chips - preheat the oven to 200Β°C. Place the chips in a bowl, drizzle with the olive oil, add the spices and season with salt. Mix well. Arrange the chips on a baking tray covered with parchment. Bake in the oven for about 5 minutes until golden and crispy.
  3. Serve with the Sun-Dried Tomato Hummus.

And because it’s Meatless Monday, it’s a great meat free option to have today.

It seems I haven’t posted a MM recipe for a long time! So it was about time! The truth is I post whenever I can. I know I should probably make a schedule and stick to it but it’s really difficult and my plan almost never works.

For example, I had quite interesting recipes to test, photos to edit and of course blog posts to share. And of course, lots of other stuff to do. πŸ™‚ What happened? Well, chickenpox happened. πŸ™‚ Not me, but my daughter got it so we stayed at home for the whole week. And I had to make sure to entertain her and the little one too. I barely had time to cook. But this is over now, so we are back to our normal schedule – nursery, playgroups with the baby and Β the only time I’ve got is when they nap. So the longer the nap, the better the work I manage to do. Hopefully I’ll be able to upload a few yummy recipes this week! Fingers crossed! πŸ™‚

Anyway, I think you get the point, back to this gorgeous Grilled Vegetables & Halloumi Bulgur Salad…

It’s one of the simplest recipes to make and yet it’s so delicious and very filling. Bulgur in general is quite filling so if you need a meal to keep you up for longer this is the one. There are tinned veggies you can use, if it’s more convenient for you, but the freshly grilled veggies would taste better.

I also added a generous serving of hummus which I had in the fridge for a couple of days. It worked really well with the veggies and even the bulgur. πŸ™‚ It also probably doubled the calories! πŸ™‚

And I used Chilli Halloumi which is so tasty! Now that I found it in my local shop I always get in my weekly shopping and add it to salads, bbqs, sandwiches. It is quite spicy, so if you’re not hot food lover go with the normal Halloumi.

I can’t tell you how delicious these cheesy buns turned! Yum, yum, yum…

The cheese literally exploded, imagine how much was in there. If you are cheese lover like me you’d love these, no doubt. There’s Parmesan cheese, Mozzarella & Feta. And the recipe is actually quite easy. I saw a similar recipe on the web and I really liked the idea, I haven’t used the same ingredients though, I kind of made my own muffins/buns. Really not sure how to call them – they’re baked in a muffin tray so that’s why I called them muffins but on the other side are like bread/buns. Anyhow, you get the point. And it is that they’re super delicious.

Here’s how to make Three Cheese Savoury Muffins.

Ingredients

  • 400g flour
  • 1 sachet(7g) yeast
  • 1tsp salt
  • 300ml milk
  • 50g butter
  • 200g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 100g Feta Cheese, grated
  • 1 egg yolk
  • extra butter for baking
  • chopped parsley for sprinkling

Instructions

  1. In a bowl, combine the flour, yeast, salt and milk. Work the dough, place in a bowl, cover with a tea towel and leave for about 30 minutes to rise. If necessary add more milk.
  2. Preheat the oven to 180Β°C.
  3. Divide the dough into 7-8 equal parts.
  4. Roll each out in oval shape and sprinkle a mixture of the cheese on half of it. Start wrapping and halfway through make a few cuts with a knife. Finish wrapping the bun so you have something like a wrap.
  5. Now make a ring and place in a greased with butter muffin tray.
  6. Repeat with the rest of the muffins.
  7. Brush the muffins with the egg yolk and then sprinkle with the parsley.
  8. Bake in the oven for about 30 minutes or until ready.

The dough is made of flour, yeast and milk. I should say, I am not that good in making dough for bread but this was really simple and turned out delicious. All you need to do is to combine the ingredients, work the dough and then wait for it to rise.

This is another delicious recipe using muffin tray. It makes me think I actually need to change mine, it’s been a good few years of use. In fact, I need a whole lots of baking equipment. Can’t wait to pick up some new and exciting stuff soon.

I used dry parsley again. As I Mentioned in my previous post I’ve been using it very often. It’s all chopped up for you and ready to use. Plus, you’re not gonna need to worry how to store it for longer. On the other side though, fresh is best. πŸ™‚ But this is what works for me at the moment.

The Three Cheese Savoury Muffins would be ideal snack for picnic. They really got me thinking about spring, sun and picnics. My daughter absolutely loves having picnics, so as my whole family and I can’t wait for the weather to get warm and sunny so we can enjoy a nice day out.

I should probably make a double batch of these then. πŸ™‚

They are perfect for sharing, as a side, as a snack, just one of these get together recipes. Make sure to have them when they’re nice and warm and the cheese is melted. Nothing better than a melted three cheese bun. Nom, nom, nom. πŸ™‚

Is it Spring yet? The weather today was amazing and we actually got lots of sunshine. Hopefully this doesn’t change in the next few days. And I know, once Spring is here, many of us start planning the Summer – holidays, get in shape programs and whatnot. It’s just so exciting! The holiday part, I mean. Meanwhile, we’re gonna have to wait patiently and hope for more sunny days!

Cauliflower, Broccoli & Cheese Bites

And now back to the recipe again…I was about to make Cauliflower and Cheese with Broccoli but then I thought I might make something a bit different this time and mix thing up a little bit. This is what happened. These bites are actually even easier to make and take a few minutes. All you need is a blender and then the rest is left to the oven. Apart from the cauliflower and broccoli, I used single cream, eggs and a generous amount of cheese. There is no flour so these bites are tasty gluten-free option too and are not that high in calories. Well, they’re pretty healthy(probably with a bit less cheese though). πŸ™‚

They’re actually quite like a breakfast bites with all the cheese and eggs. πŸ™‚ Also, they’re perfect for snacking all day long. πŸ™‚ And the colour they turned is quite pretty, isn’t it. It’s so bright and fresh!

The kids enjoyed them too. They were really attracted to the muffin-sized bites and actually had a few of them. So that was a success! πŸ™‚

They usually eat broccoli but are not fans of cauliflower. Well, I don’t think they realised there’s cauliflower but that was not necessary at all, was it. πŸ™‚

It’s amazing how many things you can actually prepare in a muffin tray. It seems muffin trays are not what they used to be anymore. πŸ™‚ I’ve made different breakfast bites and I simply loved them. I have to admit it, cooking nowadays has become really inventive.

Ingredients
  • 200g broccoli
  • 150g cauliflower
  • 200g Cheddar cheese
  • 2 eggs
  • 200ml single cream
  • 1tbsp butter
  • salt and pepper
Instructions
  1. Preheat the oven to 200Β°C.
  2. Combine all the ingredients and work them in a blender till a smooth consistency. Season with salt and pepper and mix well.
  3. Grease a muffin tray and empty the mixture.
  4. Place in the oven and cook for about 20 minutes or until ready.

Easy Falafel Pita

Happy Sunday all! Today’s recipe is Easy Falafel Pita!

It’s super simple recipe, really easy to make and yet is so delicious and healthy.

Just perfect for a lazy Sunday lunch!

Easy Falafel Pita

The main ingredient is chickpeas, of course and then you’re gonna need some pita bread, red onion, avocado. Simple as that. You can always add extra veggies if you prefer or sauces. I had the falafel pitas with sour cream and hot sauce but you can have them with whatever sauces you fancy.

I made the falafels with onion, garlic, olive oil and parsley. They quite remind of hummus. But this is because the ingredients for the hummus are the same, you only need to add tahini paste and your hummus is done.

Easy Falafel Pita

The falafels are so delicious you can easily have them by themselves, probably with a bit of sauce. You can even add them in a salad. They really taste good with some fresh spinach. They’re perfect for appetizers and meze platters. I love ordering meze platters when out because you get all these yummy stuff like falafel, hummus, halloumi, etc. So why not make this at home to entertain your friends? I bet they would be delighted. πŸ™‚

I also baked these in the oven, so again no frying. πŸ™‚ And my kids loved them, which is probably the most important thing. πŸ™‚ Yay! Another recipe they really liked! Well, they didn’t have them with the pita but that doesn’t really matter because they really enjoyed the falafels. πŸ™‚ So now I’ve got about five recipes they really liked, one for each day of the week. πŸ™‚ Just kidding!

Ingredients
  • 300g chickpeas, cooked
  • 2 garlic cloves, crushed
  • ½ onion, chopped
  • 2tbsp lemon juice
  • 1 egg
  • 2tbsp chopped parsley
  • 1tbsp flour
  • salt and pepper
  • For serving:
  • pita bread
  • red onion, sliced
  • avocado, sliced
  • coriander leaves
  • sour cream
Instructions
  1. Preheat the oven to 200Β°C.
  2. In a bowl, combine the falafel ingredients and mix well.
  3. Make small balls and arrange them on a greased baking tray.
  4. Cook in the oven for about 20 minutes or until ready.
  5. Serve on a pita bread with the red onion, avocado and fresh coriander leaves.
  6. Add sour cream and hot sauce, if wished.

Easy Falafel Pita

Apart from the pita bread, you can use wraps, kebab bread and even buns. Yes, why not make vegetarian burgers. Use the same ingredients but simply arrange them on a bun. Falafel burger sounds nice, doesn’t it! You might add some melted cheese too, otherwise it might be a bit dry.

The bottom line is the options with these tasty falafels are so many – burgers, salads, pita breads, etc. They make a very nutritious and healthy meal so I think I should make them more often. And now that my kids like them, that’s a serious reason to make these, let’sΒ say, weekly. πŸ™‚

Tip: Make sure to soak the chickpeas in water before cooking them. You can use tinned too but I read that it’s much better to use dry chickpeas so I stuckΒ to it. πŸ™‚
