Happy Tuesday guys! Today’s recipe is Milk Chocolate Flapjack with Goji Berry, Cranberries & Seeds – another Christmas inspired recipe that is so tasty I simply can’t get enough of it.Β πŸ™ˆ

Milk Chocolate Flapjack with Goji Berry, Cranberries & Seeds

Not only these flapjack bites are generously soaked in butter but they’ve got a thick layer of milk chocolate. At least the oats, dry fruit and seeds are on the healthy side so I think it balances things out.Β πŸ˜†

I used cranberries, goji berries, pumpkin seeds and sunflower seeds. The result was crunchy, sweet and buttery flapjack bites – perfect as a snack, dessert or whenever you crave something sweet and crunchy.

They are suitable for freezing which I did so I still have some of these beauties left. I munch on them almost everyday. But seriously, what’s not to love about them.

Milk Chocolate Flapjack with Goji Berry, Cranberries & Seeds

Oh, I forgot to mention.. I also added some raw cashew nuts in the mixture and desiccated coconut. You can really add any seeds, nuts or dry fruit you fancy. And did I mention there’s no cooking involved? Yay! What you have to do is to simply mix all the ingredients together, empty in a tray and freeze for a couple of hours. That’s all, simple as that.

It seems to me the more Christmas is approaching the more sweet and indulgent stuff I’m making. I usually don’t make that much but now th kids want to make Christmas cookies, festive hot chocolate, Christmas cupcakes and whatnot. So it’s kinda inevitable at the moment. But we don’t complain, we really enjoy trying what we’ve made, especially the kids. And that’s what Christmas is all about, isn’t it

Milk Chocolate Flapjack with Goji Berry, Cranberries & Seeds

Milk Chocolate Flapjack with Goji Berry, Cranberries & Seeds

Ingredients

  • 250g oats
  • 100g milk chocolate, melted
  • 200g butter, melted
  • 3tbsp desiccated coconut
  • 100g raw cashew nuts
  • 2tbsp sunflower seeds
  • 2tbsp pumpkin seeds
  • 50g dry goji berries
  • 50g dry cranberries

Instructions

  1. In a bowl mix all the ingredients, apart from the chocolate, together.
  2. Pour in a tray and freeze for a couple of hours.
  3. Take out of the freezer and add a thick layer of the milk chocolate on top. Freeze for an hour.
  4. Cut in small bites, if wished.
  5. Enjoy!

This Pumpkin Bread was definitely the best I’ve ever made and ever tried. My kids just loved it! But who wouldn’t with all this white chocolate dripping and on top of that caramelized pecans! I am honestly drooling now! πŸ™‚

Also, with all of that Halloween madness and pumpkin carving in particular it is a great way to use up your pumpkin pulp. I hate wasting any food so I always save it and make something tasty. I actually have a big bowl of pumpkin pulp in the fridge at the moment due to the carving yesterday. πŸ™‚ I am thinking of a thick pumpkin soup and a pumpkin chocolate cake I’ve been meaning to make for a long time πŸ’‘ . So fingers crossed and my plan works I’ll hopefully share the recipe with you next week. πŸ™‚

Now back to this moreish White Chocolate & Caramelized Pecans Pumpkin Bread. Apart from the white chocolate and pecan, I used pumpkin (obviously πŸ™‚ ), flour, eggs and a bit of sugar. The recipe is really simple! I would normally have my pumpkin bread with a bit of butter but this one doesn’t need any (hello, just look at the toppings) πŸ™‚ Needless to say, it was gone quickly. We even had some leftovers for breakfast the next morning.

White Chocolate & Caramelized Pecans Pumpkin Bread

White Chocolate & Caramelized Pecans Pumpkin Bread

Ingredients

  • 300g pumpkin, pureed
  • 400g flour
  • 100g butter, melted
  • 100g white chocolate, melted
  • 10-15 pecans
  • 100g brown sugar
  • 1tsp baking powder
  • 2eggs
  • 1tbsp cinnamon
  • 1tsp nutmeg
  • 1tsp cloves
  • extra sugar for caramelizing

Instructions

  1. Preheat the oven to 180Β°C.
  2. In a bowl mix the dry ingredients together.
  3. In a separate bowl mix all the wet ingredients.
  4. Combine all the ingredients and pour the mixture in a greased loaf baking tray.
  5. Bake in the oven for about 40 minutes or until ready.
  6. To caramelize the nuts - simply combine them with some sugar and cook on the hob for a few minutes until the sugar's caramelized.
  7. Drizzle the white chocolate on top (make sure it's been just melted) and add the caramelized pecans.
  8. Enjoy!

Mini Kale Pizzas

Just look at this gooey centre! I promise the Mozzarella cheese is not that much as it looks. There are lots of other veggies like red peppers, olives, sun-dried tomatoes. Also, I used corn flour (no particular reason, it’s just I find it tastier than the white one). The recipe is super simple to make and at the same time tastes delicious! Not to mention the benefits of kale.

Ingredients

  • 100g kale, pureed
  • 150g corn flour
  • 2 eggs
  • 1tsp baking powder
  • 1tsp salt
  • 100ml passata
  • 1tbsp dry thyme
  • 10 black olives, pitted
  • 7-8 sun-dried tomatoes
  • 1 red pepper, chopped
  • 150g Mozzarella cheese, grated
  • 2tbsp olive oil

Instructions

  1. Preheat the oven to 180Β°C.
  2. In a bowl mix all the wet ingredients and combine with the dry ingredients.
  3. Grease a muffin tray and pour the muffin mixture halfway. Add some of the grated Mozzarella and pour a bit more of the mixture.
  4. Bake in the oven for about 40 minutes or until ready.
  5. Enjoy!

Happy Friday guys! Today’s recipe is Falafel Stuffed Eggplant – or should I say Eggplant Salad. πŸ™‚ I seriously struggled with the title, but it is basically an eggplant stuffed with falafel, corn & peppers salad. Or is it? I hope you get my point. πŸ™‚

Falafel Stuffed Eggplant

Whatever you decide to call it, this Stuffed Eggplant is super delicious. I used tinned corn, roasted peppers and falafels which were leftovers from the day before. Eggplant and falafels taste really well together. πŸ™‚ The eggplant was hanging alone in the fridge for a few days now so I had to figure out a way/recipe to use it and not waste it (which I hate). That makes it a leftover too, right. It turns out this recipe is made of leftovers. πŸ™‚ So this is what I came up with – Falafel Stuffed Eggplant.

Falafel Stuffed Eggplant

All you have yo do is to bake the eggplant. I cooked it as it is, whole, for about 20 minutes and then simply stuffed it with the rest of the ingredients. To make the falafels, check the recipe hereΒ Easy Falafel Pita. They’re pretty simple too. The recipe is with pita bread, but these tasty balls can go on anything – salads, sandwiches, bread, pita, veggies.

Ingredients

  • 1 eggplant
  • 3-4 falafels (recipe on the blog)
  • 150g tinned corn
  • 1 roasted red pepper, chopped
  • a bunch of fresh coriander, chopped
  • 1tbsp olive oil
  • 1tbsp fresh lemon juice
  • salt to taste
  • sour cream for serving

Instructions

  1. Preheat the oven to 200Β°C.
  2. Place the eggplant on a greased baking tray and cook in the oven for about 20 minutes or until ready.
  3. In a separate bowl, combine the corn, roasted peppers, olive oil, lemon juice, salt and coriander. Mix well.
  4. Stuff the eggplant with the salad and add the falafels on top.
  5. Serve with some sour cream.
  6. Enjoy!

Happy Wednesday guys! Today’s recipe is Hasselback Butternut Squash Mexican Style – a lovely vegetarian recipe that is perfect for a busy weeknight dinner.

This is a simple recipe but yet so delicious. This succulent Squash is literally bursting with flavors – it’s topped with freshly made guacamole, black beans, sweet red peppers and sour cream. I served this gorgeous Squash with some warmed up tortilla wraps and guess what happened – amazing Squash wraps. I personally had it on its own, just with a generous amount of the toppings so it was a bit like a salad or I’d like to think so. πŸ™‚ No matter what, this is seriously delicious. And it’s on the healthy side too, so why not have a few extra servings. πŸ™‚

Here’s how to make the Hasselback Butternut Squash Mexican Style

Hasselback Butternut Squash Mexican Style

Ingredients

  • 1 small butternut squash, 'hasselback' cut
  • 1 red pepper, chopped
  • 150g black beans, cooked or from a tin
  • sour cream for serving
  • For the guacamole:
  • 1 ripe avocado
  • 1 lime, juice only
  • 1/2 small red onion, chopped
  • salt to taste
  • a bunch of fresh coriander, chopped

Instructions

  1. Preheat the oven to 200Β°C.
  2. Place the Squash on a baking tray and cook in the oven for about 30 minutes.
  3. Meanwhile, make the guacamole - mash the avocado and simply mix all the ingredients together.
  4. Serve the Butternut Squash topped up with the guacamole, sour cream, red peppers and black beans. Add some tortilla wraps for tasty Squash burritos.
  5. Enjoy!

I’m all about dips recently. For some reason, I’ve been making lots of veggie chip, like beetroot, sweet potato & carrots. Even though the kids absolutely loved the veggie chips they’re not that keen on the dips I create. They love regular hummus (by regular I mean just plain hummus, before I’ve added something to it πŸ™‚ ) a lot but this is where there love for dips end. πŸ™‚ I think it’s something to do with their age or simply with the dips I make. πŸ™‚

Roasted Kale & Feta Cheese Dip

If you’re a bit fed up with just regular hummus, although I think I’ll never get fed up with it, or just looking to spice things up a bit, I say you try this creamy Kale Dip. It’s so simple to make and tastes delicious. I’ve mixed it up with some cream cheese, feta cheese, roasted garlic and seasoning. Garlic tastes much better when roasted rather than raw, the flavor can be quite sharp so I tossed a few cloves with the kale and roast everything together in the oven for a few minutes.

By the way, this green dip works perfect as a spread too. Try adding it on your sandwich/bagel, you can even toss it in your pasta or in your salads. Seriously, if you, like me, are a true kale fan, you’re gonna love it no matter how you consume it. πŸ™‚

  • 150g kale
  • 2 garlic cloves
  • 100g cream cheese
  • 100g feta cheese
  • 1tbsp lemon juice
  • 1tbsp olive oil
  • 1tsp pepper
  • salt to taste

Instructions

  1. Preheat the oven to 200Β°C.
  2. Spread the kale on a baking tray. Add the garlic, drizzle some olive oil and season with salt.
  3. Place in the oven for about 10 minutes.
  4. In a bowl, place all the ingredients and work the mixture with a food processor till thick and creamy consistency.
  5. Enjoy!

Today’s recipe is Butternut Squash & Root Veggies Bulgur Salad – a beautiful Fall salad that you’re gonna fall for! πŸ™‚ Seriously, it’s so colourful, packed with so many vegetables, crunchy and simply delicious! Not to mention the health benefits! πŸ™‚ Bulgur wheat, beetroot, butternut squash & radishes are just a few of the yummy ingredients!

Butternut Squash & Root Veggies Bulgur Salad

As the weather is getting a bit chilli (or a lot) I can’t stop but think about heart-warming and comforting recipes like stews, soups and salads too. There are so many amazing Fall salads that I love and this Bulgur is one of my favs. It’s so nourishing and tasty and yet very healthy, packed with vitamins and minerals. All you need is beetroot (which we’ve been having a lot recently), radishes, butternut squash, some corn and chickpeas (optional). The dressing was very simple – extra virgin olive oil, fresh lemon juice and salt, you can never go wrong with this dressing. Β However I also added some of my spicy avo mayo (recipe hopefully coming soon) which is one of the most delicious dips ever (my opinion and taste πŸ™‚ ). It’s the simplest thing to make – chilli flakes, avocado, lime & olive oil. It tastes delicious with rapeseed oil too. Of course, that made the salad even more filling and this meal filled me up for a long time. If you prefer, you can add some sliced avocado instead.

  • 200g bulgur, cooked
  • 1 beetroot, chopped
  • 7-8 radishes, sliced
  • 100g corn, tinned
  • 150g butternut squash, cooked
  • 2 celery stalks, chopped
  • For the dressing:
  • 2tbsp extra virgin olive oil
  • 2tbsp lemon juice, fresh
  • salt to taste

Instructions

  1. In a bowl, simply mix all the ingredients.
  2. Whisk the dressing ingredients separately and pour over the salad.
  3. Serve with some extra lime/lemon wedge, if wished.
  4. Enjoy!

A little update on the reception, as promised…It actually goes better than I have ever expected. My daughter absolutely loves going to school and she adores her teacher too. Isn’t that lovely! You might think ‘oh, just wait and you’ll see’ but honestly so far is amazing and I’m more than happy!

I’m all about lunch boxes recently. My daughter is quite fussy so I try to make her lunch boxes healthy, tasty and suited to her taste at the same time. The good thing is she loves fruit and veg so there’s no issue with that. But when it comes to sandwiches, soups and any other homemade food, she’s quite fussy. Number one rule is ‘no white’ which means no feta, no yogurt, no eggs, no cheese even. For example, the other day she asked me to make her a sandwich for school with ham and bread only. Can you believe it? I was pretty sure she wouldn’t like it but when I picked her up from school she’s finished all her lunch box and even said to me the sandwich was super tasty. Really? πŸ™‚ I guess her taste buds are still developing. πŸ™‚

Cheery Tomato & Cream Cheese Spinach Muffins

Also, she really likes savoury muffins, especially the spinach ones I make. So I thought I’d make some for her lunch box. I used cream cheese which I mixed with the spinach so she won’t tell there’s some. The ones I usually make are with feta cheese and she always picks it out. I added some sliced cherry tomatoes as I know she loves them. However she picked them out too. She really liked the muffins though and even wanted some more for the next day, apart from the cherry tomatoes which she asked me toΒ pick out. πŸ™‚ So, yes I’m all about school lunches now. πŸ™‚

Cream Cheese & Cherry Tomato Spinach Muffins

I personally love these Spinach Muffins, I can’t get enough of them. But how could you not like them – they’re pretty, they’re tiny (like ‘two big bites’ tiny) and they taste amazing. As I already mentioned, perfect for lunch boxes, picnics and simply as a snack on the go.

Cherry Tomato & Cream Cheese Spinach Muffins

These beauties are very simple to make – eggs, flour, spinach, cream cheese and a few cherry tomatoes. All you have to do is mix the ingredients together and bake. Simple as that.

Cherry Tomato & Cream Cheese Spinach Muffins

Ingredients

  • 200g flour
  • 100g spinach, pureed
  • 2 eggs
  • 1cup yogurt
  • 50g butter, melted
  • 200g cream cheese
  • 5-6 cherry tomatoes, sliced
  • 1tsp baking powder
  • 1tbsp mustard seeds
  • 1tsp salt

Instructions

  1. Preheat the oven to 180Β°C.
  2. In a bowl, mix the spinach and cream cheese. Add the butter, eggs and yogurt and mix well.
  3. Gradually start adding the dry ingredients - flour, baking powder, mustard seeds and salt.
  4. Empty the muffin mixture in a greased muffin tray. Throw a few cherry tomato slices and bake in the oven for about 30 minutes.
  5. Enjoy!

I hope you all are having a great weekend so far! I myself had a super fun Saturday at a local farm picking some veg. The kids absolutely loved the idea of picking their own veg and then getting to help me cook them later. Seriously, freshly picked beetroot makes amazing veg chips. I should probably share the recipe with you (it’s no rocket science really, but there are a few tips and tricks) πŸ™‚ Plus, I make them in the oven so they’re much healthier, tastier and cheaper too than the shop bought chips. πŸ™‚ Oh, and the kids love them!

Raspberry Chocolate Pie

I really don’t know how come we haven’t done this earlier. The farm itself was beautiful with great restaurant where they served really delicious food. My favourite place though was the farm shop. Now, I’ve been to quite a few of those and to be honest wasn’t that much impressed for various reasons. But this particular shop, oh I was in heaven! πŸ™‚ First of all, it was very spacious, with lots of different counters filled with gourmet items. I honestly can’t stop thinking about it and about the items I’m getting next time! πŸ™‚

The Raspberry Chocolate Pie is super moist and chocolatey, you couldn’t resist. The raspberries add this amazing berry hint that is just divine with chocolate. The recipe is super simple, all you need is some flour, chocolate, eggs, sugar and raspberries. I’m not a very good baker myself so I always look for the easiest baking recipes and this one is definitely such. All you have to do is mix everything together and bake. πŸ™‚

Ingredients

  • 200g raspberries
  • 3 eggs
  • 200g flour
  • 1 cup sour cream
  • 150g sugar
  • 150g butter, melted
  • 200g dark chocolate, melted
  • 1tsp salt

Instructions

  1. In a bowl, start combining the dry ingredient together and the wet ingredients in a separate bowl.
  2. Mix well. Combine the two bowls and mix again till a smooth consistency.
  3. Gently add the raspberries and stir the mixture thoroughly.
  4. Empty the pie mixture in a greased baking tray and place in the oven for about 30 minutes or until ready.
  5. Enjoy!
