The weekend is here and it’s time for a treat!
This time, it’s dark chocolate cheesecake bites with lime & sea salt.
I love everything sweet and salty(I am especially fond of salted caramel and dark chocolate with sea salt) so it was about time to make something like that in my kitchen.
Also, this time, I decided to cut the cheesecake in small pieces/bites. This is so much better, for example, there’s no need to finish a whole piece of cheesecake, you can just have a bite, or…you can have as many bites as you want!

Here’s what you need for this heavenly delicious dessert.

Ingredients:
  • 300g/10oz dark chocolate
  • 1 cup double cream
  • 400g/1lb digestive biscuits, crushed
  • 200g/7oz butter, melted
  • 200g/7oz cream cheese
  • 1 lime, cut in slices
  • 1 lime, juice only
  • 1tbsp sea salt

Preparation:
  1. Break the chocolate in pieces and melt it using the bain marie method.
  2. Add the double cream and stir well. Leave on a side to cool.
  3. Meanwhile, combine the crushed biscuits with the butter and arrange them in a tray covered with baking paper.
  4. Season the chocolate mixture with the sea salt and add the lime juice.
  5. Pour the mixture over the biscuit layer and refrigerate for at least 2 hours.
  6. Before serving, cut into small squares, add a lie wedge on each square and season with some extra sea salt.

I’ve got a lovely recipe today! I admit it, I’ve never tried it before, and I wish I had.
It took me five minutes to prep it and another 20 to cook, it’s very simple and uses only a few ingredients but the taste is amazing.
I had broccoli in my fridge for quite a long time so it was time to make something of it, I really had no idea what to do with them but hen I saw the mozzarella….and I knew it – Cheesy Broccoli Bake was on the daily menu!

Ingredients:
  • 1 broccoli(mine was quite big)
  • 400g/1lb Mozzarella, sliced
  • 200g/7oz mild Cheddar Cheese, grated
  • 100g/3.5oz butter
  • 150g/5oz cherry tomatoes
  • olive oil for drizzling
  • salt and pepper
  • fresh parsley, if wished

Preparation:
  1. Work the broccoli in a food processor.
  2. Combine with the Cheddar Cheese and butter and place in a greased baking tray. Drizzle some olive oil and place in the oven.
  3. Cook for about 15 minutes. Take out from the oven and arrange the Mozzarella slices and cherry tomatoes. Place back and cook for another 5 minutes.
  4. Sprinkle some fresh parsley when serving.

Happy Wednesday guys!

It’s been a lovely day, just perfect for baking these beauties – Zucchini & Maple Syrup Muffins/Bread.
I’ve never made zucchini bread or muffins before and today the time has come! 
It was so easy and quick to make these, I didn’t even use a mixer, just a spoon. 
Basically, all you have to do is to combine all the ingredients and then put it in the oven – simple as that.
And let’s talk about the result – light, fluffy, moist and not too sweet, just perfect for snack! I could’ve made them sweeter but I did not use lots of maple syrup on purpose, so that they taste like bread/muffins.
It’s a delicious recipe that is ideal for Spring so go ahead and let’s get cooking!

Here’s what you need.

Ingredients:
  • 3 cups zucchini, grated
  • 2 cups flour
  • 1 cup yogurt or sour cream
  • 5tbsp maple syrup
  • 1tsp baking powder
  • 3 eggs
  • a pinch of salt

  1. Preheat the oven to 180°C/356°F.
  2. In a bowl, combine all the ingredients.

Almond & Coconut Tahini Bonbons

Finally being able to sit in front of the computer and blog.
It’s been a hectic week but I’m glad I can now relax and share my new recipe with you.
It’s one of these cheat recipes that taste delicious but are healthy too – Bonbons or balls with coconut, almonds, dates and tahini paste, which is the main ingredient.
You’ll love these, if you, like me, love nuts and coconut. 
They really taste like shop bought sweets but of course, much healthier(trying to eat healthy here).

So what else can I add, let’s see, sweet, tasty, super easy and just a few ingredients, so yes, you should definitely try them!

Here’s what you need.

Ingredients:
  • 200g/7oz tahini paste
  • 150g/5oz pitted dates
  • a handful of raw almonds
  • desiccated coconut

Preparation:
  1. Blend the dates in a food processor and combine with the tahini paste.
  2. Make small ball and add a raw almond in the middle.
  3. Finally, coat the bonbon in the desiccated coconut.

Kale & Feta Cheese Galette

I know I’ve made quite a few galettes but I absolutely love them and love experimenting with the fillings. And because I’ve been making and eating quite a lot of kale recently I combined the two things so the result was a Kale Galette.
I also added some cheese and eggs(you can’t actually see in the picture but they’re underneath) which made this galette a perfect breakfast too, and a healthy one.
It’s quite simple to make, the dough needs a few ingredients only, and I’m sure if you love kale like me, you’ll love this dish.

Here’s what you need.

Ingredients:

  • 400g flour/10.5oz
  • 1 cup yogurt
  • 100g/3.5oz kale
  • 3 eggs, beaten
  • 200g/7oz feta cheese
  • 150g/5oz butter, melted
  • salt

    Preparation:
    1. Preheat the oven to 200ºC/392ºF.
    2. To make the dough – combine the flour, butter, yogurt and a pinch of salt.
    3. Mix well and place in the fridge for 30 minutes.
    4. Meanwhile, combine the eggs and feta cheese.
    5. Grease a baking  tray and layer the dough, leaving extra dough on the sides so you can half wrap the galette.
    6. Pour the cheesy egg mixture.
    7. Arrange the kale and drizzle with some olive oil. Sprinkle salt.
    8. Wrap the galette and bake in the oven for about 30 minutes or until ready.

    The recipe of the day is here- it’s healthy, tasty, fresh and different – Kale & Orange Quinoa Salad.
    As i love combining sweet and sour ingredients I thought that this salad would taste nice and it did.
    I absolutely loved it – the kale was salty, dressed in olive oil and the orange was so sweet and juicy.
    This is a lovey salad that takes a few minutes but has lots of health benefits and of course, tastes delicious.

    Here’s what you need.

    Ingredients:
    • 150g/5ox kale
    • 1 orange, cut into pieces
    • 150g/5oz quinoa, cooked
    • a few chickpeas, if wished
    For the dressing:
    • 2tbsp olive oil
    • 1tbsp lemon juice
    • salt

    Preparation:
    1. In a bowl, simply dress the kale and quinoa in the dressing ingredients and mix well.
    2. Arrange the orange pieces on top and if wished, throw some chickpeas too.

    Chocolate Chip Valentine’s Day Cookies

    Today’s post is all about Valentine’s Day so the recipe, obviously, is Valentine’s Cookies with Chocolate Chips and Nuts.
    To be honest, these turned out to be a mixture between cookies and brownies (probably because I used quite deep heart shapes to bake them), but either way they were really tasty.
    The recipe uses only three main ingredients – flour, butter and sugar and it takes just a few minutes to make the dough. 
    So, it’s not too late, put your apron on and let’s get started. Make your loved ones happy!

    Here’s what you need.

    Ingredients:
    • 200g/7oz flour
    • 150g/5oz brown sugar
    • 125g/4oz butter
    • 1 egg
    • 150g/5oz chocolate chips
    • a few chopped hazelnuts

    1. Preheat the oven to 170°C/340°F.
    2. In a bowl mix the butter and sugar well.
    3. Add the flour and egg and mix again.
    4. Fold in the chocolate chips and nuts an make a smooth dough.

    6. Place on a greased baking tray and cook in the oven for about 20 minutes or until ready.

    This post was meant to be published on Monday but well, it wasn’t. 
    So, a few days later I’d like to share with you this healthy salad with kale and zucchini spaghetti and radishes. 
    It’s so fresh and tasty it reminds me of Spring. The accent here is on the zucchini spaghetti. I definitely think I should use my four blade spiralizer much more often than I do. I absolutely love the spirals it makes and kids do too. 
    Otherwise, the salad is really simple – 3 ingredients and olive oil and lemon dressing – healthy, tasty and fresh.

    Here’s what you need.

    Ingredients:
    • 10 radishes
    • 2 zucchinis, spiralized
    • 100g/3.5oz kale, finely chopped
    For the dressing:
    • 2tbsp olive oil
    • 1tbsp lemon juice
    • salt

    1. In a bowl, combine the salad ingredients.
    2. Mix the dressing ingredients in a separate bow and pour over the salad.
    3. Mix well and serve.

    Tip: The spiralized zucchini can last a few days, so to make your life easier, make a bigger batch, place in  a bowl and cover with cling film and store in the fridge. Add to your every day meals!

    Creamy Corn & Turmeric Soup with Parmesan Shavings

    Another quick and simple recipe is on the blog today – Creamy Corn Soup with Turmeric and Parmesan Shavings. It’s tasty, it’s sweet, it’s heart-warming and it’s ready in just a few minutes.
    Oh, and it’s quite budget friendly, all you need is corn, a bit of cream and cheese!
    And I’m so glad my little one loved it too! I’ve been struggling to make her eat any food lately apart from veggies and fruit(which is great but I want her to have some homemade meals too).

    The recipe is super simple so get the ingredients and let’s get cooking.

    Here’s what you need

    Ingredients:
    • 400g/1lb corn, frozen
    • 1 onion, cut in halves
    • 2-3 garlic cloves, peeled
    • 1 carrot, roughly cut
    • 1-2 potatoes, cut in halves
    • 1 cup double cream
    • 1tbsp turmeric
    • salt and pepper
    • Parmesan shavings for serving

    1. In a pot, add all the veggies and cover with salted water. Bring to a boil and simmer for about 20 minutes or until the veggies are soft.
    2. Leave on a side to cool down. Add the double cream and blend the mixture.

    Butternut Squash & Peas Pasta Salad

    The recipe of the day is here and is another quick and easy fix that will leave you full for longer.
    As I love butternut squash and I wanted to use the one I had at home to make a salad, here’s what happened – Squash Salad with Penne and Peas. 

    One of my favourite squash salad is actually with feta cheese, you can find the recipe here. But it was time to try out something new and this new recipe really worked for me. I dressed the salad with fresh lemon juice, olive oil and salt so it added some extra freshness. And to finish it off, I grated some Parmesan cheese. It was really yummy and easy to make so I definitely recommend it if you’re struggling to find time to cook!

    Here’s what you need.

    • 400g/1lb butternut squash, sliced in cubes and cooked
    • 300g/10oz penne, cooked
    • 150g/5oz peas, cooked
    • fresh parsley for serving, if wished
    • Parmesan cheese for serving

    • 1tbsp fresh lemon juice
    • 2tbsp olive oil
    • salt

    1. In a bowl, combine the salad ingredients together.
    2. In a separate bowl, mix the dressing ingredients together and pour over the salad.
