Mummy’s Fast & Easy

I know how boring chicken with rice sounds, but believe me, this is not just chicken and rice, it’s much  more than that.

OK, first of all, the chicken is marinated with lemon and honey and then coated with sesame seeds, and it’s not fried but bake.
So you’ve got sweet and sour juicy chicken bites coated with sesame seeds that are actually  quite healthy.

Secondly, the rice is cooked with some yummy fine beans and sweet corn, and it is brown rice (which I personally think it’s tastier than the white).

This recipe needs only a few minutes to cook, it is super tasty and super healthy – a perfect weekday dinner I’d say.

Here’s what you need.

Ingredients:
  • 400g/1lb boneless chicken thighs, cut into bites
  • 1 lemon, juice only
  • 1/2 cup pure honey
  • 3tbsp sesame seeds
  • salt
For the rice:
  • 300g/10oz brown rice
  • 150g/4oz fine beans, cut into small pieces
  • 150g/4oz corn(frozen)
  • 4tbsp sunflower oil
  • salt

Preparation:
  1. Marinade the chicken in the lemon juice and honey at least for an hour in the fridge.
  2. Preheat the oven to 200°/394°.
  3. Coat the chicken bites in the sesame seeds and arrange on a greased baking tray.
  4. Cook in thee oven for about 20 minutes or until ready.
  5. To prepare the rice – cover with water and bring to a boil. Season with salt and add the oil. Add the veggies and simmer for about 10 minutes or until ready.
  6. Serve the chicken on a bed of rice and vegetables.
