Ingredients:
For the Shrimp:
- 400g large shrimp, peeled and deveined
- 1 tbsp olive oil
- salt and pepper to taste
For the Takis Crust:
- 2 cups Takis (Fuego flavour or your favorite), crushed into crumbs
For the Bowl:
- 2 cups cooked black rice (or quinoa for a healthier option)
- 2 mangoes, cubed
- 1/2 red onion, thinly sliced
- 2 jalapeno peppers, chopped
- a bunch of fresh cilantro, chopped
- lime wedges, for serving
For the Sauce (optional):
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon hot sauce (optional)
- salt and pepper to taste
Preparation:
Step 1: Prepare the Shrimp
In a mixing bowl, toss the peeled and deveined shrimp with olive oil and a pinch of salt and pepper. Make sure the shrimp are evenly coated with the seasoning.
Step 2: Coat the Shrimp with Takis and make the Mango salsa
Crush the Takis into fine crumbs using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin. Pour the Takis crumbs into a shallow dish. Take each seasoned shrimp and press it into the Takis crumbs, ensuring it’s well-coated on all sides.
For the mango salsa, simply combine all the ingredients together, season with salt to taste and mix well.
Step 3: Cook the Shrimp
You have two options here:
- Frying: Heat a couple of tablespoons of oil in a skillet over medium heat. Add the Takis-coated shrimp and cook for 2-3 minutes per side, until the shrimp are crispy and cooked through.
- Air fryer: Place the Takis-coated shrimp on a lined baking sheet and air fry for 10-12 minutes, flipping halfway through. This option is slightly healthier and still gives you that delicious crunch.
Step 4: Assemble the Bowl
Start by placing a generous scoop of cooked rice in each bowl. Add the spicy mango salsa. Then, add your Takis shrimp on top.
Step 5: Make the Sauce
In a small bowl, whisk together the sour cream (or Greek yogurt), lime juice, hot sauce, salt, and pepper. Adjust the seasoning to your taste. Drizzle this zesty sauce over your Takis Shrimp Bowl to tie all the flavors together.
Step 6: Serve and Enjoy
Finish each bowl with a squeeze of fresh lime juice and an extra sprinkle of cilantro if you like. Serve immediately while the shrimp are still crispy. Each bite will be a perfect blend of spicy, tangy, and fresh flavours.
These Takis Shrimp Bowls are a fun and flavourful way to spice up your mealtime routine. The combination of crunchy Takis, juicy shrimp, and fresh, vibrant mango salsa makes for a meal that’s both satisfying and exciting.
