  • 150g tinned corn, drained
  • 2 large carrots, julienned
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • a handful of mixed leaf salads
  • 2 tablespoons extra virgin olive oil
  • 1/2 lemon, juice only
  • Salt and black pepper to taste
