Pulled Pork Burgers with Pickled Slaw

Ingredients:

For the Pulled Pork:

  • 1.5kg pork shoulder, boneless
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 garlic cloves, peeled
  • 3 shallots, peeled and sliced in half
  • 1 tbsp cumin
  • 2tsp cinnamon
  • 2tbsp sunflower oil
  • salt and black pepper to taste
  • 2tbsp soy sauce
  • 2-3 bay leaves

For the Pulled Pork Burgers:

  • Brioche buns
  • Pulled pork
  • Pickled slaw
  • Pickles (optional, for topping)
  • Red onion slices (optional, for topping)

Instructions:

Prepare the Pulled Pork:

  • Preheat the oven to 150°C. In a small bowl, combine all the dry spices, sugar & sunflower oil into a smooth mixture and rub the pork with it. Place it in a Dutch oven, add the garlic, onion & bay leaves and around 1l of water.
  • Cook in the oven for around 3 hours, checking from time to time and if needed adding more water. Make sure not to leave it dry.
  • Once cooked, shred the pork and mix it with the sauce remaining in the pot for extra flavour

Assemble the Pulled Pork Burgers:

  • Lightly toast the brioche buns on the grill until they are golden brown.
  • Add a tbsp of mayo & pile a generous amount of the succulent pulled pork onto the bottom half of each burger bun.
  • Top the pulled pork with a heap of coleslaw for a refreshing crunch. Add pickles and red onion slices for extra texture and flavor.
  • Place the top half of the burger bun on each creation, creating a delicious and hearty Pulled Pork Burger.
