Cheesy Double Baked Stuffed Potatoes

These delicious pots are quick, easy and perfect for a busy weeknight dinner. You can adjust the filling to whatever you’ve got left in your fridge – it’s a great way to clear it and use any ingredients that are about to go off.
And I’m sure potatoes are always present in every house so no reason not to try this. You can even prep ahead – bake the potatoes in advance and once ready to enjoy, simply add the filling and cheese and bake in the oven for about 10 minutes. Easy as pie!

What you need:

  • large potatoes
  • red pepper
  • corn
  • chicken
  • Mozzarella cheese
  • fresh parsley
  • sour cream

Here’s how to make these tasty Cheesy Double Baked Stuffed Potatoes
Ingredients:

  • 4-5 large potatoes
  • 150g cooked chicken, shredded
  • 150g Mozzarella cheese, grated
  • 1 red pepper, choppped
  • 100g sweetcorn
  • fresh parsley, chopped
  • sour cream, for serving
  • jalepenos, if wished
  • 1tbsp olive oil
  • salt and pepper to taste

I used shredded chicken but any meat would work – pulled pork, beef, turkey. You can skip the meat and make them vegetarian, for a lighter option. In that case, mushrooms will be perfect addition. Honestly, the options are limitless, as you can see. Choose the one you and your family likes the most and enjoy!

Cheesy Double Baked Stuffed Potatoes

Preparation:

Preheat the oven to 200°C.

Arrange the potatoes on a baking tray and cook for about 25 minutes or until softened.

Meanwhile, combine the corn, chicken and peppers. Scoop out the potatoes, mash the insides and add to the bowl with the filling. Add the olive oil, season with salt and pepper and mix well.
Fill the potatoes with the mixture, add the mozzarella cheese on top and bake in the oven for another 10 minutes.
Serve with a scoop of sour cream, fresh parsley and jalapeno peppers, if wished.

It’s been a while since my last recipe post but I’m getting back on track and staring with at least one recipe per week, hopefully two, if possible. It’s been crazy busy few months and as much as I love this space, I couldn’t find the time to post here. 🙁 I tried and kept with my reels though but not as often as I wanted to. Also the winter months in the UK are quite dull and if I miss the short gap of light, that’s it. 🙂
As always, lots of new recipes to test, it’s just a matter of finding time and being more organised. 😉
