Happy Thursday guys! Recipe of the day is Raspberry Pistachio Semifreddo – creamy & refreshing explosion of Pistachio cream and raspberries. The combination is divine!
What you need:
- double cream
- pistachio cream
- raspberries
- icing sugar
For me, this is the perfect Summer dessert, I mean it just screams Summer. The combination of Pistachio cream and raspberries with double cream is out of this world. Freeze it overnight and you’ve got one of the tastiest and refreshing desserts ever.
Now on the ingredients..
Let me just tell you how budget friendly this dessert is. Before making it, I was certain I’d need a long list of ingredients but that is not the truth. All you need is double cream, raspberries, a bit of icing sugar and pistachio cream. It tastes like white chocolate with pistachios to me and it’s quite on the sweet side, hence you barely need any sugar. If you can’t find the Pistachio cream, simply use chopped pistachio nuts and add more sugar.
The making..
Well, there’s not really a secret behind it. It’s one of the easiest thing to make. All you have to do to whisk the double cream until thickens and then gently add the rest of the ingredients, be especially gentle with the raspberries. Freeze for 6 hours or overnight and you’ll get yourself a truly gorgeous dessert that your friends and family will absolutely love, I promise you. I
It’s ideal for BBQ, which i when we enjoyed it. I had made it the previous day and it was a perfect finish for our yummy bbq on a lovely Spring day. It’s the little things that make you happy, isn’t it! For me, is definitely the food and I think the simpler, the tastier. 🙂
Here’s how to make this beautiful Summer dessert – Raspberry Pistachio Semifreddo
Ingredients:
- 400ml double cream
- 200g raspberries (can use frozen)
- 5tbsp Pistachio cream
- 2tbsp icing sugar
Preparation:
- In a bowl, whisk the double cream and icing sugar until thick. Add the Pistachio cream and raspberries and very gently mix everything really well.
- Transfer the mixture in a freeze proof dish and place in the freezer for at least 6 hours.
- Before serving, leave it in a room temperature for 10 minutes. Serve with some fresh mint leaves and may be a shot of limoncello. 🙂
